Avocado Lime Dressing

This weeks video is a little all over the place. For those that watch every week the tree in the belly has turned into a "bug"... I think! You'll have to watch and translate.

As for the meal, I used some precooked chicken tenders and made a quick spinach salad topped with the Avocado Lime Dressing. It's super quick and REAL tasty!

Avocado Lime Dressing

  • ¼ cup avocado (about 35g)
  • 1 tbsp lime juice
  • 1 tsp dried cilantro
  • ½ tbsp honey (10g)
  • pinch of Salt & Pepper (forgot to add in the video)
  • 2-3 tbsp water to your desired consistency

Place all ingredients in blender or good processor. I used my magic bullet. Top your favorite salad or use as a dipping sauce for fresh veggies!

    Holy Guacamole is that dressing good. I tinker with everything so I added garlic and jalapenos, which may have made it a bit thicker but the few tbsps of water did the trick and then I chopped up tomatos, onions, cucumbers and tossed it in the dressing. Even the hubz loved it. Awesome idea.

    Love the dressing/dip. I have it on 1/2 Arnold sandwich thin with slice cucumber.

    my son Joey watched this video with me..... He LOVES Ryan, he thinks he's a hoot!
    I love this idea of avocado dressing, yet another idea to use my magic bullet that i got for Christmas this year:)

    Actually the lime juice kept it pretty good. But mine didn't last past day 2 (as in I ate it) so after that you're on your own. ;~)

    This is awesome! I love love love salad but i recently found out that im allergic to vinegar.. Which stinks! So ive been looking for some alternative salad dressing ideas.. So this is perfect timing! Im totally making this tomorrow for lunch =]

    I just have to comment on Ryan--he's so cute! But I have to also tell you--3 is HORRIBLE!!! I remember when my son turned 3 I thought to myself man 2 was a piece of cake! No one ever tells you that 3 is worse than 2. My son is now 4 and I LOVE 4! It's so much fun!!! So you have a light at the end of your tunnel there. 🙂 We've been told that it's the odd years for boys that are rough.

    Thank you for posting an idea with avocado. I love guacamole but can't eat it that often. I know avocado is so good for you but I have no idea how to prepare it! I will be trying this one. THANK YOU!!!

    Roni, I can't help but crack up laughing when watching Ryan. He reminds me so much of my own two boys when they were little (so long ago...my oldest is now 13, youngest is 10!). Anyway, I don't fancy avocado, either for the same weird texture reasons. I am hesitant, but intrigued to try this and will give it a go this weekend! You are always inspiring me to try something new. Thanks for that.

    Ryan needs an agent! LOL We have a magic bullet, its awesome for mixing chocolate milk, making shakes or salsa!
