One thing you need to know about me... I LOVE a challenge. So when ATHENOS asked if I was interested in becoming a Spokesblogger for their Make a Change for the Feta campaign and coming up with 18 Feta Cheese ideas for the month of July, I was immediately interested.
Here's the thing... I rarely eat Feta and I don't think I'm alone here. I mean like it. I get it on my wraps at work all the time. I just never really thought about fun ways to use it at home.
Well, that's all about to change!
I have a fridge full of feta and at least a dozen ideas in my head. I honestly can NOT wait to get started tomorrow. I love the idea of having a goal for the next few weeks... it gets my creative juices pumping!
In addition to my recipe ideas I'll be doing a giveaway every Friday! The giveaway will include ATHENOS Feta coupons a free month membership to Lifetime Fitness, and other goodies to be announced. I'll have a picture of the prize pack this Friday for our first one.
Below are some more details about the campaign.
Oh! and keep an eye out for me on the ATHENOS Fan Page! They will be showcasing my ideas along with the other Spokesbloggers.
MAN! This is going to be fun! 🙂 I'll be back tomorrow with my first idea... take one guess what I'll be tackling... I'll give you a hint.. I'm addicted to it. 😉
Keep an eye on this page to see all my feta cheese ideas.
What is ATHENOS Feta?
ATHENOS Feta is a white, crumbly cheese made exclusively from pasteurized milk. It has a rich, tangy flavor that ranges in texture from soft to semi-dry and can be used on anything from salads to pizza and pasta dishes. ATHENOS Feta is available in both large chunk and crumbled varieties and 11 different flavors.
What does Make a Change for the Feta mean?
Make a Change for the Feta is a call to action: Make a simple change in how you top your salads and enjoy more flavors with fewer calories. ATHENOS Feta cheese naturally has one-third less fat and 30 percent fewer calories than cheddar. Who are the other ATHENOS Make a Change for the Feta spokesbloggers?

How did I become involved with ATHENOS Make a Change for the Feta and “Summer Salad Month” as a spokesblogger?
I partnered with ATHENOS Feta and became a Make a Change for the Feta spokesblogger because I believe in eating delicious food and trying new things are a part of a balanced lifestyle. It's all about small changes, right? I hope to inspire you to try something new and possibly something a little lighter then your current cheese choice.
How does ATHENOS Feta compare nutritionally to other cheeses?
ATHENOS Feta naturally has one-third less fat and 30 percent fewer calories per serving than cheddar cheese. Plus, ATHENOS Feta offers 6 grams of protein per serving.
Does ATHENOS Feta have more sodium than other cheeses?
ATHENOS Feta has similar sodium content to other soft crumbly cheese (roughly 390mg). Because of its bold flavor, ATHENOS Feta can enhance the flavor of a dish in place of adding traditional table salt. It also can be used in smaller servings than the recommended serving size to add a touch of flavor to favorite dishes.
Is ATHENOS Feta a low-fat cheese?
While ATHENOS Feta is available in reduced-fat and fat-free varieties, traditional ATHENOS Feta is not a low fat cheese. ATHENOS Feta naturally has one-third less fat and 30 percent fewer calories than cheddar cheese, however.
Where can you find ATHENOS Feta cheese?
You can find ATHENOS Feta cheese nationwide in the specialty cheese section of most local grocery store or supermarket chains.

Cows as far as I know.

What kind of milk do they use? Cow, goat, sheep, combo???

Karen - Athenos was the first one I ever tried! Nothing to compare to.

I love feta, but Athenos is one of the worst I have tried. I usually buy cheaper and better feta in bulk from a local middle eastern grocery store. Even in my small midwestern city, there are several international groceries/delis catering to Muslim immigrants which carry it. Also a great source for fresh pita, olives, and other interesting foods.

Love Athenos! Love Feta even more! I even enjoy reading your recipes with feta! so I have to try these soon! thanks for sharing! [email protected]

I DISCOVERED FETA ABOUT 3 YEARS AGO. IT'S A REGUALR ITEM IN MY FRIDGE NOW. IT TASTES GOOD ON ALMOST ANYTHING OR I JUST EAT IT PLAIN.

Hi M! I didn't know REAL feta was made out of Sheep's milk! Is there a difference in texture?
M
I don't like cow's milk feta like Athenos....
I prefer the REAL feta which is sheep's milk and also sometimes a nice goat milk feta-try 'em SO tastier and better in my mind!

I'm so excited you're doing special ideas involving feta. I love it!!! I just discovered it about a year ago and have it any chance I can. Unfortunately I'm the only one in the house who does like it...well I guess that doesn't have to be unfortunate! 😉
Jennie
I know you aren't big on cheese and eggs, but maybe since feta has such a different texture and its a nice salty bite. Maybe added to a veggie omelet? I love Feta on everything mmm!

I love pasta with pesto and a bit of feta on it - a great combination!
I buy Athenos all the time - their feta is great and I am so looking forward to your ideas!
CaSaundra
I love using feta in stuffed pizza peppers!
Icea
I love feta and I'm excited to see all your ideas. I toss beets (roasted or buy them pre-steamed in the produce section) with fresh herb vinaigrette, then top with feta. So good.
Alison
I LOVE feta, especially since it has such a strong flavour you need less of it.
Shrimp, Tomatoes and Feta go really well together in a bake with or without pasta and bonus it all cooks really fast.

I look forward to your new feta recipes. Wow looking at my blog I use feta a ton, crazy.

I love feta. I buy it buy the block. I cut it into 1/4 inch slices and bread it like a cutlet then fry it. So Good on top of spinach and mixed green salad, in a crusty piece of bread w/ sundied tomatoes & pitted calamata olives!
Becky
It's awesome in omlets!
Jill
I LOVE feta cheese. I have to have it in my fridge at all times. My favorite way to use it is on salads. I take some nice organic greens, top them with sunflower seeds, tomatoes, onion, dried cherries, croutons, chicken breast, and feta. Top that with some light honey mustard dressing, and it is to die for! Yum!!!!!!
Andrea
I love putting feta in my omlettes. My daughter loves it over her rice from the Greek place at the mall. Everything tastes better with feta!!! My favourite is feta brushetta mmmmmmmm!!!!!
Liz
I also make a couscous salad with whole wheat couscous, feta cheese, tomatoes, cucumbers, artichoke hearts and I use a little balsamic vinegar and olive oil for the dressing. It is super yummy and can jazz up any protein (i like it best with shrimp or chicken). Feta is probably one of my favorite cheeses because its a bit tangy and creamy. It is great for any salad.
I've always wanted to grill feta but I'm not very good at grilling but maybe this summer!

Roast up some of those veggies that you've been getting from your CSA. Then chop them into bite size pieces and mixed with some crumbled feta and red wine vingegar. Good just like that or in a wrap! You'll be amazed at how many veggies you can eat in this format. 🙂
Lisa
I love feta! I typically put it on salads or pizza, but I'm excited to see the creations you come up with, maybe I can find a new way to use it.
Jan
My guess for your first recipe is Pizza too! 🙂
kelly
PIZZA?!?! Whose got two thumbs and thinks your feta ideas will rock?? THIS GIRL! Hells yeah I make you tortilla pizzas like 1-2 times a week. We like to make a homemade oil infused soak for feta and keep in in a jar lik that and pluck out pieces for a snack, just an idea. 🙂
FoodontheTable
I LOVE feta cheese. I put it on everything - pasta, pizzas, salads. If I'm at a restaurant and the dish has feta, there is a good chance I'm ordering it. Lucky you that you get to be a spokesperson!!!!

I cannot function without feta so I am looking forward to your recipes! 🙂
Feta is particularly magic with roasted butternut squash or sweet potato. This is a fabby and healthy recipe - http://www.travelerslunchbox.com/journal/2005/6/9/for-the-sweet-love-of-spud.html
And one of the best pizza toppings - usual tomato sauce, then cubes of roasted butternut, feta, a few cashew nuts and a drizzle of basil pesto. Hubba hubba!
Or you can't beat nigella lawson's feta and watermelon salad for a summer's day. Sounds weird but the salty feta contrasting with juicy watermelon is ace 🙂
Krista S.
I love cheese....pretty much all of them and am really excited to see what you come up with! I haven't used feta much at all because I never really know what to do with it, either.
roni
Thanks guys! These are GREAT IDEAS! and totally new for me!!
Gail
I just used feta this evening making dinner. I made a shrimp and broccoli scampi-type thing (I was winging it), and I thought a sprinkling of feta would spark things up. Shrimp and feta is a great combination.
Melissa @MelGetsFit
I *love* Feta cheese! I can't wait to see all the ideas you post. One of my favorite ways to use feta is mixing it up with some whole wheat couscous, sun-dried tomatoes, black olives, red onion, and a drizzle of olive oil. It makes a wonderful Mediterranean salad.
