    Quick Apple-Walnut-Cheese Salad

    I’m so sorry. I feel like I've been neglecting GreenLiteBites. I've been cooking and eating, I swear! I've even snapped a few shots of ideas that simply haven’t made it to the site yet.

    My absence is partially do The 7-Year-Old’s Spring Break, which I've been blogging about on my travel blog. We've been doing something fun every day this week as a sort of staycation for him. I’ve also been distracted by GreenLiteBites redesign.

    That’s right! We’re getting a new look soon! I’m excited and nervous about it. I’m hoping to make the site faster and easier to navigate. I’m even considering adding an open forum/message board area, so if you have any strong feelings either way about it, I’m all ears!

    Moving on to the real reason I’m here ...

    I just enjoyed the simplest apple salad that will have you looking at a plain old apple in a whole new light.

    I came up with this idea for The Laughing Cow last month but it’s so darn good I had to post here as well.

    I’ve said this before and I’ll say it again -- making something is always more satisfying than grabbing something, and that includes fruit. Sure, I could have just eaten the apple plain and it would have been fine, but this was a whole lot more fun, tasty and satisfying!

    Here’s what I did today ...

    Ingredients

    • ½ of a large apple (you could use a small)
    • 1 Mini Babybel Sharp Original (or your favorite Mini Babybel!)
    • 7g of chopped walnuts
    • ½ tablespoon (5g) honey
    • Dash of cinnamon
    • Dash of nutmeg

    Instructions

    I totally forgot to take a photo before I started but I had these monstrous opal apples.

    They were amazing! Crisp and sweet, but HUGE. Instead of using the whole thing I split one with this growing boy.

    I mean, really, how old does he look there?! It’s FREAKING ME OUT.

    Anyway, I cubed up my half and then cubed my Babybel,

    and added it to the apple along with the walnuts.

    Added a pinch of cinnamon and nutmeg and drizzled the honey on top.

    So simple but oh so tasty.

      YUM!! You always come up with the best ideas...even when they are simple! I am totally lacking in creativity in the kitchen. I think I have this fear of trying new creations incase it comes out horrible and I have wasted time and money ...and am still hungry. I am working on it...thanks for the continued inspiration! :-}

      I make a low calorie apple dish, by dicing one apple, dice 2-3 stalks of celery, mix 1 tablespoon light mayonaise which you added 1/2 tsp of walnut flavoring, mix all together and you have a waldorf salad!
      It is great for weight watchers, count the mayo.

      I only check a handful of recipe blogs and this is one of them. Hands down, the edge you have over the others is that your recipes are designed so that they are quick, easy and can always be made without having to go shopping for ingredients (assuming one has a fairly well stocked fridge). Of course, this is also one of the very few blogs where I actually make the recipes you post!!
      Even though I find this site super navigation friendly, I'm still excited about the redesign. The only thing that annoys me are the video commercial things on the side. They are distracting to the eye for any blog and should be trashed in my opinion.

      I have been eating Opal apples all winter! They are the only apple I will pay a ridiculous price for because they are THAT delicious! I've seriously been spending $20 a week on them and I almost get grouchy when someone else in the family wants to eat one. LOL I'll have to give it a try with the cheese. Who can say no to cheese? Not this girl.
