So some of you may consider this off-brand for GreenLiteBites, but I think part of my lack of blogging motivation stems from the fact I am so different than when I started (way) back in 2004.

For starters, I'm a lot older. When I began blogging publically, I was 29. TWENTY-NINE! How is it possible that that age now sounds so foreign to me? When WeightWatchen (aka RonisWeigh) got popular, I was around 34, I think. Honestly, I can't remember, and I'm tired of trying to pinpoint the timeframes of my past. It's exhausting.

I launched GreenLiteBites in 2007. Back then, I was all about as-low-calorie-as-possible. I rarely used sugar or ate carbs. Everything was Weight Watchers friendly because that's where I was at the time.

As the years went by, my diet evolved, and GreenLiteBites documented that change in an interesting way. I went from "diet everything" to more veggies and "whole foods." I shared more kale and butternut squash ideas I thought possible.

Now, well, now I pretty much eat everything. I'm totally INTO food if you know what I mean.

Taking the blog offline in 2015 was freeing but also disorienting. I felt lost without it. I also didn't realize how many people were using my recipes. I  would get email requests for things I didn't eat anymore. It was weird but also comforting to know people were getting something out of my work on the blog. Because if you've ever tried blogging, you know, it's a total labor of love.

Since relaunching GreenLiteBites, I've reposted maybe 25% of my old recipes. I'm not even close to the number of posts I used to have, but I enjoy knowing the blog is here when I feel like writing or sharing my passion for food.

Well, I now have a new passion that may be getting magnified with the current state of the world and my quarantined situation: cocktails.

I've slowly been building up my bar at home over the past few years, adding a bottle here and some bitters there, and now it's paying off oddly. I've been enjoying seeing what I can pull together with what I have while sheltering in place.

So, that is what brings me here today. I'd like to share my first twist on a famous cocktail called El Diablo.

Now, the El Diable is typically made with tequila, crème de cassis, lime juice, and ginger beer. Well, I don't have ginger beer, so I made it with diet ginger ale, and holy moly was it good! Both the Husband and my Mom agreed.

Here's what I did...

A Ginger Beer-less El Diablo is precisely as it's called. I wanted an El Diablo. I didn't have any ginger beer so I used the next best thing, ginger ale!

Ingredients
  

  • 1.5 oz tequila blanco
  • .75 oz lime juice
  • .5 oz crème de cassis
  • 4 oz ginger ale I used diet
  • orange peel

Instructions
 

  • Gently story the tequila, lime juice, crème de cassis, and ginger ale together and pour over ice. Garnish with a twist of orange peel.
    1.5 oz tequila blanco, .75 oz lime juice, .5 oz crème de cassis, 4 oz ginger ale, orange peel

Notes

  • If you don't have crème de cassis any sweet blackberry liquor would work too. 
  • Fresh lime juice is always better but the bottled lime juice is fine too. 
  • I don't do nutritional information for coktails. It's too confusing and I see too much conflicting data on macronutrients and calories in alcohol.
