I recorded this after my Saturday morning workout and before my house was bombarded with family members for Easter.
I put the quick instructions below the video and provided nutritional information for the way I prepared them. Mug eggs won't replace my morning omelet but when in you're in a hurry this is a great way to get in a healthy breakfast.
- 2 eggs
- 1 tablespoon bacon bits
- 2-3 strips of red pepper chopped
- handful of raw spinach chopped
- pinch of kosher salt and pepper
Put everything in the mug.
Whisk with fork.
Microwave for 1 minute.
Flip and microwave for 45 more seconds.
Eat!
If the fat content is high for you replace 1 of the eggs with 1-2 egg whites. Will work just as good!

Great video Roni. One question please. You used a packet of 'bacon bits'. What exactly are these? I am from London England & have never come across them. Cheers John.

Thanks John! The bacon bits are just pre-ccoked, packaged, small pieces of bacon. I like to use them to get the bacon flavor without actually having to fry up my own bacon. Plus it's easier to keep it light using the bits.

I have only tried the egg mug with egg whites from a box, I had no idea you could use real eggs, duh. I will for sure be trying this! You rock.

I tried this recipe out on the hubby this morning and he LOVED it. I used bacon and cheese for his. It took just under 2 minutes. He had gotten some farm fresh eggs the other day and when I saw this recipe, it made perfect sense to give it a try. This is so quick and easy. Thanks for sharing it.

Love this!! During the week I'm rushed and need quick easy breakfasts and this does the trick. Like you said, there is no excuse to not have breakfast (and no exucse to say you have to run through the drive-thru because you don't have time to fix anything).

Love this! I do it at work all the time .... I will cook a piece or two of turkey bacon on some papertowels in the microwave then scranble my eggs in a pyrex bowl .... I add some diced mushrooms and low fat cheese ... sometimes peppers and ham .... once I have cooked the eggs micro style, I crumble my bacon into the eggs .... and presto... I have a breakfast bowl .... 🙂

You noticed! HA! lol I decided since i wasn't producing videos weekly it was time to give up the green shirt requirement on myself. Maybe, if I ever get more serious in the video department I'll start again. In the meantime I'm into the casual GLB videos. 😉

I don't have kids, but I just have to say I was still in the same boat as Josie. First I was totally distracted by Evan's cuteness as he ate, and then by the ballooning egg in the microwave as it cooked for the second time. LOL

Roni, I love you and have been reading/watching for years but I'm sorry I wasn't watching you...Evan was just too cute eating his egg!! again, I apologize my little man is in full on toddler mode and my stray cat just had kittens on Friday so I'm in the "I want a baby because everything they do is too freaking cute and I can't stand it" mode : P lol
But seriously, this is a great idea especially when you're hungry and need a quick fix!
