Tuna Salad Cucumber Rolls

I’ll be preaching it to my dying day: Food that’s fun, takes just a little time to prep, and look pretty is always more satisfying. Always!I made this as a quick snack today and posted it on Instagram. (I try to keep an accurate food journal there although not everything makes it when my battery dies or I forget my phone.) Anyway, as soon as I posted it all these questions rolled in so I thought I’d share the post sooner rather than later.

Which reminds me, this may be my last post for a awhile. I’m leaving for Italy tomorrow!! Anyway, here’s what I did to make this quick dish…

  • 1 English Cucumber
  • 1 Carrot cut into thin strips
  • 1 5oz can of Tuna Drained
  • 1 tbsp Fat Free Greek Yogurt
  • 1 tsp lemon juice
  • punch of salt and black pepper
  • Soy Sauce mixed with Wasabi for Dipping

With a large knife cut thin strips of cucumber longwise.

This is when I wish I had a mandolin but I don’t. :) Just do the best you can. Mine weren’t perfect but I knew they would work.

Mix the drained tuna, yogurt, lemon juice, salt and pepper.

Note: You can make the tuna anyway you like. This is just my quick and dirty salad recipe when I’m in a pinch. To make the roll add a tablespoon of the tuna salad on on end of a cucumber strop and top with a few thin carrot
slices.

Then simply roll!

The thin ones stayed together better. I just stuck a toothpick in them to
prevent unrolling.

Some people asked if it was hard to eat? With the smaller ones I’d just
dip into soy sauce like sushi and pop in my mouth. Let me tell you there is
also something satisfying about big bites! The ones that were too big I’d
just eat in 2 bites.

As you can see they stuck together pretty well. Not hard to eat at all and
actually very desk friendly as I snacked on these while working.

    Looks delicious. Can’t wait to try it. I crave sushi a lot and this will be a great alternative when I’m really trying to eat healthy.

    I was delighted when I saw this fabulous recipe!!! I love cucumber. You have a steady hand to slice your cucumbers that well. I’m thinking maybe a mandoline might be good as well to get a real thin cucumber. I can’t wait to try them. thanks for sharing.

    I am new to your site, but so excited to try many of your delicious looking recipes. It says to make a soy sauce and wasabi dip, what would be the measurements of this. i.e. how much wasabi to soy sauce?

    Charlene – I don’t measure, it really comes down to a personal preference as wasabi can get real hot real fast. I like things spicy. :)

    Just made these and love them! Sadly I had no wasabi in the house (next time). I used Hellman’s half fat mayo because I didn’t have any Greek yogurt in the house. I pointed it out and the points were the same (yay!). Rather than salt and pepper, I used Epicure’s Garlicky Dill topper…sooo good! Trying to eat these with chopsticks was a bad move on my part though – cucumbers are slipper devils ;-)
