Why Hello Stranger! I’m so sorry I’ve been MIA. Funny enough my absence was to attend the BlogHer Food Conference in Seattle. It was awesome! I went, I ate, I learned, I networked, I had a blast! Click here to see some of my recaps.
I arrived home inspired but coming off a red eye, I had no time, desire or energy to cook. Instead I made a quick yogurt parfait. Chobani was an exhibitor at the conference and they had a yogurt bar that was to die for! It convinced me that I don’t need to buy cups of artificially sweetened yogurt. A tub of fat free greek, some fresh fruit a little honey is amazing!
So on the way home from the airport I stopped at the grocery store to pick up a few supplies instead of the the drive-thru and made myself an amazing breakfast. Here’s what I did…
- 1 cup fresh berries (I used strawberries and blackberries)
- 1/2 cup Fat Free Yogurt (I used Greek)
- 1/2 oz Almonds chopped (14g)
- 1 tbsp Cocoa Nibs (Found in the spice isle, can use mini chips chopped up)
- 1/2 tbsp honey (14g)
Layer all the ingredients starting with berries. I did berries, yogurt, almond, cocoa nibs, honey and repeated until I was out of ingredients saving a small dollop of yogurt for the top.
If you are new to cocoa nibs, they are simply cracked cocoa beans, unsweetened. A great way to add a little chocolate hint with a fun texture.
Little Guy doesn’t like them so he asked for his own parfait with more berries, less yogurt and no cocoa nibs. His wish was my command. :)
Other combos I’ve been dreaming up for yogurt parfaits…
- Banana slices, cocoa nibs, peanuts
- Diced apple and cinnamon toast crunch
- Mango and granola
- Walnuts, raspeberries and honey
