Produce Pick: Jicama [video]

I TRIED to do an old fashioned Produce Pick video, but with a grumpy baby and a 6 year old, I was very distracted. SO let me tell you about Jicama before you see our train wreck of a video.

Jicama is root vegetable, resembling a large potato or turnip. It’s crisp, refreshing, and slightly sweet. Like a firm white watermelon, a sweet radish, or even a raw tasty potato. A cup of jicama (130g) has a whopping 6g of fiber, 1g of protein, no fat, and a mere 50 calories.

    I’m with Ryan on the jicama…it’s good, but I don’t really know what it tastes like either. Kind of a cross between a lot of things, but it sort of reminds me of the vegetable version of an Asian pear. I like it, but don’t buy it often because they are usually super huge and nobody else here really digs it. I bet you could go savory or sweet with it…like perhaps use it like you would water chestnuts even.

    I absolutely LOVE jicama. I have an WW recipe that is a salad that has jicama, mango, chicken, red onion and cilantro. It is so yummy and super filling. The dressing is lime juice, cumin, hot sauce, and olive oil. I bring it a lot to summer things because it has no mayo and it’s usually a hit.

    I also like to eat it just like carrots and think its a great addition to any salad.

    We LOVE jicama at this house too! I like it with lemon juice, a little salt, and some mexican fruit spice. I also second Liz’s suggestion to make a fruit salad/salsa out of it.
    It’s a great way to bulk up a summer salad.

    It HAS been a while since I saw one of your videos. Ryan is a little man, and such a sweet boy! So adorable to see him and his little brother interact.
    I think I bought jicama once, and it reminded me of celery and cabbage, I couldn’t figure it out either. I wasn’t sure if I liked the taste either, didn’t do much for me. But I could see it tasting good in some kind of cold slaw or salad.

    I like it too. To me its like eating a raw potatoe.
    when I was a kid (long time ago) we use to eat slices of raw potatoes, and thats what it remind me of.
    I have actually slice it with other veggies and used a dip and ate them.
    I think a salsa would be nice too. Need to buy another one.
