Homemade Almond Milk the Video

The little guy and I decided to make some almond milk this morning. We’ve been snowed in all weekend and LOVING it.

Today we tried to make some chocolate chip cookies following this basic Flourless Chocolate Chip Almond Cookies Recipe. The results were ok but I’d like to take my hand at them before posting. They were missing something. And don’t say flour. ;~P

love the almond milk! i have some almonds soaking in the fridge right now. i made the mistake of diluting it last time; this time i will use it at full strength :)

Thanks, I forgot all about almond milk; I really hate cow’s milk so I usually go for the rice milk.
I have some almonds soaking tonight so I can try give it another go tomorrow, then I’m going to give the almond cookies a try. (My son wanted to know if I was going to use the almonds AFTER all of the “goodness” was ground out of them. He said, “Isn’t that little like sucking all the chocolate out of chocolate chips and then making cookies with them?”

I have a question, what blender do you use? Sounds crazy I know but I have been through a TON of blenders, resorted to my Bullet but your blender looks great.

How long do you think this would keep in the refrigerator? I know when I’ve bought it at the store it keeps for around two weeks, but I was wondering about fresh made because I am sure I’d be the only one using it.
Maria – I’ve stored mine for up to a week in the fridge with no problems. After that I’m not too sure.
omg his pouting is soooo cute! I’m in love with your blender! I just finished making almond milk and it was a huuuuuge success with the hubby who wants to guzzle it all down before it even has time to chill in the fridge. While the almonds were soaking I slipped off all the skins. I only had a little meal after blending, and my ‘milk’ was suppppper sweet and creamy. It wasn’t bitter at all. Next time I may try quickly blanching the almonds to make the skin removal faster.
