Mini Apple Pies

Sometimes I just get craving and last night was one of those times. After recording a video for Roni’s Weigh I took my hand at an idea I’ve had for some time. Could I use won ton wrappers as crusts for mini apple pies?

Well, I’m happy to say, the answer is YES!

I can’t believe it worked! Even the husband liked them! At least he said he did after his one big ole bite. I don’t get it. I just don’t get it! I almost ate the whole batch in one sitting. How does he do that?!?

Anyway, this is what I did. I’m working from memory hear so bear with me.Mini Apple Pies

  • 1/4 cup of water
  • 1/4 tbsp honey (5g)
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla
  • 1 tbsp whole wheat flour
  • pinch of salt
  • 2 small apples diced – about a cup (I used gala and left the skins on)
  • 8 won ton wrappers

Preheat the oven to 375

In a small pot whisk the water, honey, cinnamon, vanilla, and flour over medium hear. Add the apple. Stir to coat everything. The liquid should just boil and start to thicken.

Drop the heat down to medium low and cover. Cook for 12-15 minutes until the apple just softens.

Meanwhile, spray a mini muffin pan with non-stick cooking spray press the won ton wrappers in to form the crusts.

Once the apples are done. They should look like this…

Scoop the apple mixture evenly into the wontons. Bake for about 10 minutes until the edges start to brown and get crispy.

I didn’t have any but boy would these be great with a dab of frozen vanilla yogurt or cool whip! Here’s a little before and after cooking…

    Wow, Roni, this is a GREAT idea! You could put anything in those little buggers, and as long as you make the “anything” healthy, it’s all good. And they’re tiny, so you can make just a few at a time (like your 8), so you don’t go crazy and eat a million of them. My husband cooks with won tons all the time, but ALWAYS with the deep fryer. I had never thought of baking them in mini muffin pans. Can’t wait to try it! I think I’ll make strawberry-rhubarb pie. :) I think I’ve asked you before, but have you ever tried agave nectar instead of honey? It has a lower glycemic index… and I don’t know if that also computes to lower calories, but the stuff is a great, thick sweetener.

    While I love me some apple pie the hubby does not ( what a weirdo) but he does love each pie…maybe I will try this with some peaches…we shall see, me and wonton wrappers don’t mix well but it might be worth a try.

    These look really good! Hungry Girl did something almost identical in her email the other day but she used egg roll wrappers.

    I made this last night and it hit the spot. With a little spoonful of frozen yogurt it was over the top! Great idea, very easy and quick to make.

    Amazing! My husband looooved them. I ended up doubling the recipe because I had huge apples and I think the hubby might eat them all.

    I made these tonight and used phyllo cups instead of the wrappers. They were very good. I put a little cool whip on top. I used gala apples, has anyone tried these with granny smith apples?

    These were a total hit at our super bowl party! We are taking on round two of weight watchers but still wanted to have fun food at our party… This was a great ending to a fun day and great game!

    love this as a pie filling…not as huge of a fan of the wonton wrapper part, but, def healthier than a pie crust. this may be my new pie crust filling though :-)

    Thanks for the recipe. I had all the ingredients but the cinnamon, so i added caramels that i had. They still turned out great! Whip cream gave them just the right touch to douse the sweetness of the caramel. They were a hit!
