Chocolate Ricotta Rolls

Posted in: Cookie Ideas, Dessert Ideas, Food Photos, Party Ideas, Snack Ideas, Video Posts | 41 Comments

I’ve been DYING to share this idea with you. It’s my new favorite snack! :)

Chocolate Ricotta Rolls Here’s how I made the batch in the video. Remember, take the idea and run with it! :)

  • 6 won ton wrappers
  • 1/2 cup fat free ricotta cheese (124g)
  • 1/4 – 1/2 tsp stevia powder (or other sweetener to your tasting)
  • 1/4 tsp cinnamon
  • 1/2 tsp cocoa powder
  • 1/4 tsp almond or vanilla extract
  • dusting of cocoa powder, stevia or powdered sugar for dusting

Preheat the oven to 350 degrees.

Roll the wrappers into tube shapes sealing with a bit of water. Stand them upright on a cookie sheet and bake for 10-12 minutes. (see video for demonstration)

Mix the ricotta cheese, stevia, cinnamon, cocoa powder.

Plop the cheese mixture in a ziplock bag, snip off the corner and fill won ton tubes.

Sprinkle with cocoa powder and stevia for effect. :)

Roni, what a great idea!! I can’t wait to make this over the weekend!

  2. Pubsgal on January 8, 2009 3:28 pm

Oooo, these look good! I’ll have to try them.
(Has anyone told you how *awesome* it is that your recipe pages format nicely all by themselves when one does a print from the browser? I love that!)

  3. Amy on January 8, 2009 3:34 pm

Yum. What a delicious and light treat! I’m going to have to try this soon.

  4. Nicole on January 8, 2009 4:23 pm

I have yet to try Stevia–I’m assuming if I substituted splenda I’d need a lot more than 1/2 tsp. Do this taste anything like cannoli? If so then YUM!

I LOVE eggroll and wonton wrappers. I use them to make homemade mini burritos, eggrolls, and my favorite reuben wraps. I fill them with a mix of saurkraut, swiss cheese, and diced corned beef. Then we dip them in dressing. It’s great. I either bake them or lightly fry them on the stove with olive oil.

I love what you’re doing with wonton wrappers! I can’t wait to try these, and I’m interested to find out how well they keep.

Thanks for all these great recipes. Most of my menus come from your ideas. And my husband is as picky, maybe even worse, than yours. I appreciate knowing I’m not the only one dealing with that!

  8. Michele on January 8, 2009 10:47 pm

OMG – I swear if I had the ingredients in the house I would make these right this minute!!! They look awesome!

  9. Ideanna on January 8, 2009 11:56 pm

I literally just made them right now…at 11:56pm lol THEY WERE DELICIOUS!!! Definitely going to be making them more often.

  10. Christy on January 9, 2009 2:18 am

    Oh yum this looks fantastic!

  11. ttfn300 on January 9, 2009 8:09 am

    great idea!!

  12. Lori on January 9, 2009 8:39 am

These look yummy! Question about “1/2 fat free ricotta cheese” – 1/2 of how much?

  13. Michele Dochat on January 9, 2009 11:38 am

This sounds SOOOOO yummy…I think even my hubby will eat these! Gotta make some to munch on during the football game this weekend!…So now I have dessert for the tailgating…even if it is one the sofa!…I need to find a few more goodies to go along that aren’t loaded with calories! Thanks Roni!

  14. Gabriella on January 9, 2009 12:07 pm

What section do you find the won ton wrappers in? Can you find them at the regular grocery store or are they only found at specialty stores? These sound great! Can’t wait to try them!!

  15. karen on January 9, 2009 1:22 pm

    Great recipe!!!
In the 80s I had a weight loss center and we used sweeten ricotta made lots of good recipes!!!
    have a great day!!

  16. Christine on January 9, 2009 1:28 pm

I just made these… tweaked the recipe a little based on what I had in my cupboard! I added to the ricotta some mini choco chips, little peanut butter, sweetener, and vanilla extract. YUM! These were fun to make too–making the “rolls” felt kind of crafty. thanks Roni!

  17. roni on January 9, 2009 1:34 pm

Gabriella – They are in most grocery stores in the produce section. I always have to ask! :)

  18. roni on January 9, 2009 1:35 pm

Lori – Sorry! 1/2 cup! LOL

  19. Krista S. on January 9, 2009 2:55 pm

Oh man, my boys are gonna LOVE these!

  20. Nathalie on January 9, 2009 3:25 pm

Thanks for the idea Roni it looks great! I’ll try them soon.

Where I live I can only find the wonton wrappers in boxes in the freezer section of any grocery store, so those of you who can’t find them in the produce section might want to take a look at the freezer section with the other asian frozen food.

  21. HangryPants on January 9, 2009 6:05 pm

Wow they totally look amazing. Thanks for the great idea!

  22. SeaShore on January 9, 2009 7:43 pm

Oh, what a clever idea! I’m going to try these next week (have to pick up some ricotta & wrappers!)

  23. Sally on January 10, 2009 2:24 am

Im not a cannoli girl either.. Never tried em.. Dont like em lol.. But i love the idea and will be making them for everyone else because everyone in my house LOVES cannolis! Thanks as always =P

  24. melissa (fitnessnyc) on January 10, 2009 10:59 am

Amazing and great nutrition stats! Although the choc-blueberry pancakes are next on my list of green lite bites to try!

  25. Krista S. on January 10, 2009 3:19 pm

Totally weird, but my markets don’t carry fat-free ricotta! I could have sworn I saw it before, but all I can find is low-fat, which I got and will be trying these this weekend!

  26. Ally on January 10, 2009 11:48 pm

Roni, These look delicious. What a terrific idea. the crunch from the wonton would be just perfect…. I can’t wait to go shopping and grab some wrappers. Clever girl!!! YUM!!!!

  27. Dana on January 11, 2009 3:16 pm

Wow Roni! I just made these yummy creations and they were just delicious! I have to say, I’ve always been intimated by won-ton wrappers and have never tried to do anything with them. After watching your video yesterday, I went to the store and followed your directions. Wow! I just ate all 6 of them for 5 points, but it was well worth it! Just yummy, delicious, so cute and very satisfying!!!!!! The only difference that I did was to eliminate the cocoa…I just wanted to try a cheese-cakey thing and it worked really really well!!!! Thank you so much for this recipe and for all of your hard work. I’ve been following you for over a year now and you are an inspiration…truly!!!
    :) Dana

Nicole – I’ve heard that Splenda is 100 times sweeter than sugar and other substitutes. I would suggest adding just a little and tasting it. You can always add more, but it’s really hard to take out once you’ve mixed it in.

I made these this weekend and they were great! Next time I’m going to cut back on the vanilla extract. Maybe mine is old, but it gave it a very strong alcoholy taste. I also threw a few wrappers in the oven covered with a little Pam, cinnamon and stevia. What a wonderful crispy, sweet treat.

  29. roni on January 12, 2009 11:08 am

Nicole – Sorry I missed ya. I’d go with a packet or about tsp of splenda, taste it and then add more to your liking. I made mine less sweet. You’ll have to find what works for you.

Sorry for the late response again!

  30. Diane on January 12, 2009 3:04 pm

I made these yesterday and they turned out really good. The husband was a bit disappointed they weren’t more “chocolately”, but he liked them nonetheless. Next time, I think I may add a bit of mini chocolate chips to give it some more chocolate taste.

  31. Dorothy on January 13, 2009 12:04 pm

These look SO good! I just bought a package of wonton wrappers that I’ve been brainstorming for how to use… and I have some leftover ricotta! I’ll be making these this week!

  32. Dawn on January 14, 2009 8:33 pm

First video I’ve watched, and aren’t you just the little cutie patootie? LOVE the idea, I’m a huge fan of those wonton wrappers, and I’m always looking at new ideas to use…plus I never thought to put them in the freezer! Plus I haven’t tried the stevia yet, but just got a sample in the mail…looks like I’ve got a reason to try it now!

Thanks for the awesome ideas, and keep up the great work hon!

I tried these tasty little guys last night for dessert. They were very quick and tasty. I changed the ricotta cheese filing to a dream whip with cocoa powder mixed it. I was high on my points and wanted to cut a few calories. Now the only thing was, mine did not look as nice as yours. What is your secret for them keeping their shape. Some of my caved in a tad.

  34. roni on January 17, 2009 10:38 pm

Susan – Did you get them too wet? Mine just stayed up. Did you see how I did them on the video?

  35. Debra Royer on January 21, 2009 9:39 pm

Well here it is 9:30 at night and I come across this recipe, I had everything but the Wonton, so just made up 1/2 recipe in a bowl and eating it while I’m writing this message, OMG it hit the spot for something sweet, I just couldn’t believe how well it tasted, now will try with wontons on my next shopping trip. Thanks for the great recipe, I’m sharing this recipe with WW meeting next week

  36. Chrissy on January 22, 2009 9:28 am

    Hi roni-

i made these last night for the LOST premiere and they were delicious! thanks again for another great recipe :-)

  37. Sam on January 25, 2009 9:04 pm

What is dream whip? Is that whip cream?

  38. Sonia Gallagher on April 7, 2009 3:29 pm

You’ve inspired me to try this recipe tonight for dessert. Thanks for the idea!

PS. You also inspired me to start recording personal meditation videos on my site too!

  39. Becca on September 26, 2009 4:03 pm

Yum! These were so good. I made these exactly like you did in your video about a week ago. I loved them but today I wanted something a little different and still had a bunch of wonton wrappers and one left over banana I needed to use. I wanted to make 12 so I doubled the ricotta amount you suggested and added the mashed banana, a little vanilla extract and some splenda. I topped them with fat free whipped cream. Wow! It was sooo good! Thanks for your wonderful website!
