Quick Whole Grain Banana Pancakes

Yesterday was my first breakfast with the toddler in a week and I wanted to make something special! Staring at some brown bananas and about nothing else, this is what I came up with and…. it WORKED!

They were delicious! The toddler devoured them with just a bit of syrup. Just look at him, how cute? I couldn’t pick so I posted all three pics.

I chose a smear of low sugar strawberry jelly and a handful of blueberries. Not a bad 2 point breakfast, is it? ;~)

Whole Grain Banana Pancakes

  • 1 large overripe banana
  • 1 egg
  • ½ cup (4oz) skim milk
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground nutmeg
  • ¾ cup (90g) whole wheat flour

Mash the banana in a medium bowl. Add the egg and milk. Whisk until frothy.

In a smaller bowl, add the flour, baking soda, baking powder and nutmeg. Sift into the banana mixture. Mix until just blended.

Pour batter in a non-stick skillet or griddle over medium heat sprayed with non-stick cooking spray. Cook about 1-2 minutes a side, small bubbles will form but not as many as traditional pancakes. I just peaked underneath for a light brown color, then flipped.

09/13/08 Update: I didn’t have milk and replaced the 1/2 cup milk with 1/4 yogurt. The batter was super thick (mostly because I forgot the 1/4 cup water) but they came out delicious in the waffle iron!

    I made these today, subbing canned pure pumpkin for the ripe banana. They turned out super moist and fluffy. I have made them in the past with the banana, and they are delicious that way as well. :)

    You don’t have pancake day??! You Americans are missing out! For us, Shrove Tuesday, or Mardi Gras, was traditionally the day when you use up all your fattening things – eggs and butter etc – before fasting for Lent. So, pancakes! Now of course we just eat pancakes and forget about the fasting after :) They even have races with frying pans to celebrate. Cool no? I think you should start a new tradition!

    I made these this morning, and they were aboslutely amazing! I had a really over-ripped banana that I used and my pancakes were so sweet and delicious! They melted in my mouth! I used soy milk instead of skim, and they turned out so fluffy! I will definetly save this recipe, because these are amazing! :d
