Kidney Bean and Corn Salsa Salad

I don’t know WHAT came over me today. I was home working on a few projects and I just felt like something new for lunch. Yet I wasn’t in the mood for a salad or a sandwich and I really didn’t want to cook. What’s a girl to do?

Well, I ended up creating the simplest, no cook, multipurpose, filling “Salsa salad”.  (Can you tell I had no idea what to call it?)

I don’t want to pat myself on the back or anything but this was REALY good. *pat* *pat* So good, I ate it three different ways today!  First, I put a serving in a pita with a some spinach leaves. YUM! Then I just topped a pile of spinach leaves for a more traditional salad YUM! YUM! And later I took two romaine leaves and used the “salsa” as a filling for lettuce wraps.   YUM! YUM! YUM!

OK, now I probably talked it up too much but in all honestly, I really, really liked it.

  • 1 can (15 oz) can red kidney beans drained and rinsed
  • 1 small can (8 oz) sweet yellow corn drained and rinsed
  • 2 -3 slices of red onion diced small.
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tbsp dried cilantro
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • 1 tsp Tabasco sauce (or to taste)

Mix all ingredients and let it sit for about 20 minutes. That’s it! The longer it sits the more the flavors merge.

I have half in the fridge for tomorrow and honesty I may just take a fork to it and eat it straight up!

    Your website has changed my life. I’ve been using it for the past 4-5 months, and when I just dicovered ‘My Pantry’ (which is AWESOME) I was so pleased to discover mine was very similar to yours! It took a couple months of weekly visits to the grocery store to figure out what I was and wasn’t using, but it’s funny how much I use your site and how that’s connected to what I’ve started keeping around my house.     Hi Roni,

    I made this today and it’s delicious! And super simple, which is always a plus.

    One question — when I put this recipe in my WW online Recipe Builder and entered that it was 4 servings, it came out as 2 points per serving, not 4. Am I missing something?

    This was absolutely excellent. I made it while cooking dinner last night, let it sit overnight and then I ate it on lettuce wraps today and it was FANTASTIC!!!!!! Simple, fast and totally yummy!

    Amy – OK, sorry for the late response. I seem to have a nutritional Information issue every time I create a recipe with beans. They tend to up the calories which increase the points but when Weight Watchers calculates the points for beans it always seems lower then when I do the raw Calories/fat/fiber.

    So, honestly, the short answer is…. I don’t know. I’ll check my calculations again, though.

    This is so YUMMY!!!!
    I am actually eating it on a bed of romaine now and it is awesome!!! Love it.

    ncame to ur log…i am a vegeterian n really loved ur recipes….they all sounds Yummm…. i have a question about this kidney n corn salsa….can we use frozen corns n kidney beans soak overnight n pressure cook it as not want to use canned food too much….thanx
