Quick Quinoa & Turkey Taco Stew

I don’t know WHAT came over me tonight. I was planning on tacos for dinner but the weather called for a much more comforting dish. Looking in the cupboard and seeing an old package of taco seasoning and a box of quinoa this idea smacked me across the face.

The husband tried it, said it was ok and then proceeded to make something for himself. He just isn’t a “stew man”. He doesn’t like one pot meals which SUCKS because I LOVE them, especially in the cold winter months. It’s ok by me I now have 5 lunches for work!Quick Quinoa & Turkey Taco Stew

  • Small onion diced
  • 8 oz 99% lean ground turkey
  • 1 medium zucchini chopped
  • 1 small sweet pepper chopped (red, orange or yellow)
  • 1 package of taco seasoning (preferably low sodium)
  • 15 oz can pinto beans drained and rinsed
  • 15 oz can of diced tomatoes with chilies
  • 14 oz can of broth (chicken, beef or vegetable)
  • 1 cup (170 g) quinoa
  • 1 tbsp lime juice
  • Non-stick cooking spray
  • Shredded Mexican cheese blend (optional)

In a large pot sprayed with non-stick cooking spray, brown the ground turkey and onion over medium heat.

Add the zucchini, peppers and taco seasoning. Stir to coat all the vegetables with the seasoning.

Add the beans and diced tomatoes broth and quinoa. Turn up the heat to high and bring to a boil. Then cover and simmer about 20 minutes until quinoa soaks up most of the liquid.

Stir in the lime juice and serve! I sprinkled a bit of shredded Mexican cheese blend on top.

    We’re going to be trying this for supper tonight! We both love quinoa, so it’s exciting to try it in a new dish!

    Here’s the most exciting part. I met with the bf at lunch and mentioned it, and since it seems simple enough, HE’S going to be making this while I’m at the gym!

    If this actually happens I am sure I will post about it tomorrow, so I’ll let you know if we like it!

    Missy – It’s hard to explain. It’s soft, and has a great texture, almost like a a soft pastini pasta or cous cous.
    Gosh I can’t put it in words! Anyone else want to give it a try?

    Yes the texture is very similar to couscous, but GOOD couscous, like the real whole wheat bulk couscous from speciality shops. Not like the soft stuff in the little white box from your regular grocery store.
    Quinoa is *slightly* firmer than couscous. I would compare it to perfect aldente pasta pearls, or perhaps steel-cut oats.
    For some, the shape is a little intimidating, mainly because of the curl.
    I love Quinoa, and make a fabulous pilaf.
    And I just invented a recipe that can use either Quinoa or whole wheat couscous. It’s Hawai’ian Chicken Couscous (or Quonoa).

    Roni, I may just give you that recipe too, but only AFTER I see my Quiche.

    I have often printed Roni’s recipes but never made them until last night when we tried the turkey taco stew.

    I was looking forward to the leftovers, but my husband and children were looking forward to the bottom of the pot.

    I have made this several times already and I LOVE it!! It is soo yummy! Usually I skip the cheese, and lately I have been adding some hot sauce to spice it up a bit more. Thanks for all of your recipes Roni! Although I am a WW, I am a fan of quick healthy meals!

    After successfully getting my husband and I to regularly eat veggies, I’m now trying to slip whole grains in our repertoire.

    This looks similar to the chicken tortilla soup I make, AND it has quinoa.

    I made this last night and it is AWESOME!!! I couldn’t wait for lunch today b/c it’s so darn good!! I will definitely be putting this in our dinner rotation. Oh and when I made this, I also made my own taco seasoning for the first time! THANK YOU RONI!!!

    YUM!!!!! I made this tonight with the idea that the super picky husband and children would probably run for the cereal with a glimpse of this…..the children did (they dont like beans lol) but the husband (shocking!) really liked it and said I can cook it on a normal basis and is on his second helping =D I used brown rice instead of quinoa (tried it once not a huge fan and I get a lot of unconsistant nutrional info on it) and I loved it too! I told the hubby to put cheese on it, it makes it even better and he said “its good without cheese” I was floored! lol anyways it ended up being more of a spanish rice instead of a stew because I cooked all the juice out (it probably was the only reason hubby even tried it)but this is defintely another winner roni!

    Do you have the points plus for this? I did this out of your cookbook and LOVE IT! I’d love to know the protein and/or points plus for this recipe.

    P.S. kudos on your cookbook. The most impressive thing about it is the COLOR. Some cookbooks are boring – just black and white with only a few pictures. Your cookbook is so eye-catching and uses color so well. Besides the recipes, that’s the best part!! Thank you! :)
