Simple Pumpkin Spice Mini-Loaves

You will not believe how easy these are. I mean SUPER easy. Not only easy but everyone seems to like them! I’ve given them as gifts, brought them to parties and froze them for later use. This is, by far, my favorite “in a pinch” holiday dessert.
OH! and a QUOTE from the Husband, “Ohhhh that’s the stuff!” Needless to say, the toddler is a fan too! 
- 1 box Duncan Hines Spice Cake Mix
(case of 12 available in the GLB store)
- 2 egg whites
- 1 15 oz can of pumpkin
- < 1 tbsp quick oats (optional – used for decoration)
Non-stick cooking spray
Preheat the oven to 325 degrees
Whisk the egg whites and pumpkin. Stir in the cake mix and blend until just moistened.
Spray 4 mini-loaf pans with non-stick cooking spray. Evenly distribute the cake batter into the pans, just about half way.
Sprinkle the tops with quick oats and bake for about 40 minutes.
As for the serving and nutritional information, according to the cake mix package there are 12 servings. That would be 3 servings per loaf. In my opinion, you can count 2 slices per serving and easily serve 4 people per loaf (8 slices). So I’m providing nutritional information for 16 servings. That’s 4 servings per loaf. (I hope that makes sense, I almost confused myself!)

I tried something similar for Thanksgiving this year, but I also added cranberries into the mix.
I literally just tried these and they are DELICIOUS! I can’t wait to give them as gifts… as long as I don’t eat them all….
I just made this recipe, but made them into muffins instead of bread. Mmmmmm…… so delicious and the kids love them too!! Bonus: The house smells great!

This recipe was absolutely delicious!!! I will recommend it to everyone that I know! I love, love, love pumpkin spice bread and this recipe is perfect! I did not have the mini muffin pans, so I used a 9 X 12 pan and cooked it at 350 for 30 minutes and it was very moist and cooked just like a cake. Thank you soooo much Roni for this wonderful recipe. I am just starting WW’s and needed something that did not taste like I was on a diet and this recipe was very delicious!
These are sooo good! I added 1 shredded apple (peeled) to the mix and made muffins instead of the mini loaves. My 3 year old loves them!!! Thank you for all of your great recipes!!!
Roni, this may be in your blog somewhere, but I could not find it. I am looking for suggestions for “snacks” to go in my purse for when I am out and about during the day and start to FADE. I can take bagged almonds, etc. but thought I would check and see if you or your “public” have any suggestion. Something that can just go in the purse or car, no refrigeration needed. And in our Texas heat, they can’t stay in the car for very long. Was also looking for something with protein, not just a sweet thing. Any suggestions would be great. Thanks. Carolyn
