Zucchini Pizza Bites - Video Post

The toddler is back! Watch us fumble our way through one of my favorite snacks. It's a great idea when you need a cure for a pizza craving, as I do, OFTEN!

The video is a bit longer then my others, so I had to dump YouTube. Please let me know if you have any problems viewing it.

Zucchini Pizza Bites

  • 1 medium zucchini diagonally sliced (on the thicker side)
  • About 2 tbsp tomato paste
  • Garlic Powder
  • Onion Powder
  • Italian Seasoning
  • Salt & Black pepper
  • 1 oz mozzarella cheese
  • 1 tbsp parmesan cheese
  • 5 slices turkey pepperoni diced in small pieces
  • Non-stick cooking spray

Turn on the broiler on high. Line a cookie sheet with aluminum foil sprayed with non-stick cooking spray.

Mix the mozzarella, parmesan and diced pepperoni in a small bowl.

Slice the zucchini. Smear each slice with about a teaspoon of tomato paste and lay on the cookie sheet paste side up. Sprinkle with spices. Top with even amounts of the cheese mixture, pressing lightly to stick to the paste.

Broil for 2 minutes. The cheese should just start to get “crusty”.

    I watched this video again tonight and just have to say how much I miss these! I still remember when Ryan was this little....so cute! Anyway, I'm making these this week and can hardly wait.

    I made these tonight for a light dinner. My hubby and I leave for vacation in a couple of days so I'm trying to purge all of the perishables from the fridge which included two zucchini (makeing the Tortill-less Tortilla soup too) and oh my goodness....fantastic! Never would have thought of it, but love that crunch texture and pizza flavor minus the calories. What a great treat!

    Good idea. I have recently discovered polenta. I like corn meal and just bought some. I didn't know it was core though! I'm still learning mu core list!

    What about making these with polenta? I think it would work well with store bought premade polenta. For those on the Core plan polenta will not cost any points. You might have to spend points on the cheese if it is not fat free. I have not seen you use much polenta. Is it something you like?

    Just made them now and I used spagetti sauce and they were one of the best pizza alternative things I've made. I will be making these alot as its quick yummy and very healthy and low points. Thankyou Roni.

    I made this last night when I came home from work (had to go to 2 stores to find zucchini) and my sisters and I LOVED THEM. Nice snack to have tonight instead of over processed food.

    Roni - I read your blogs daily and love watching your video posts. It is so fun to see your toddler get so involved, reminds me of my 6 yr old, she is always helping me in the kitchen!     I love your website- I check it daily! I think the video was sweet with Ryan helping you- it just proves that we can be a good Mom and still take care of ourselves too!

    This looks great! I can't wait to try it.

    I love both your websites. I started WW in October and I think I am finally getting into the swing of things now. I am in the UK though, so our points values are determined by calories and saturated fat grams, as opposed to calories, overall fat and fiber. Can I be annoying and ask that you include saturated fat grams when you supply nutritional information for your recipes? When possible, of course.

    Anything that gets that pizza flavor and taste and smell and is low in points is a winner! And Ann is right...it does fit easily into the Core plan. btw...The Toddler is so well-behaved and a pro at sprinkling cheese!

    I just found both of your sites and this video, tonight, while searching for new WW recipes. Awesome stuff! I am a pizza fanatic too; so I love this alternative. It should be easy for me to adapt to Core plan. Can't wait to try it. You are an inspiration!
