The toddler is back! Watch us fumble our way through one of my favorite snacks. It's a great idea when you need a cure for a pizza craving, as I do, OFTEN!
The video is a bit longer then my others, so I had to dump YouTube. Please let me know if you have any problems viewing it.
Ingredients
- 1 medium zucchini diagonally sliced (on the thicker side)
- About 2 tablespoon tomato paste
- Garlic Powder
- Onion Powder
- Italian Seasoning
- Salt & Black pepper
- 1 oz mozzarella cheese
- 1 tablespoon parmesan cheese
- 5 slices turkey pepperoni diced in small pieces
- Non-stick cooking spray
Instructions
Turn on the broiler on high. Line a cookie sheet with aluminum foil sprayed with non-stick cooking spray.
Mix the mozzarella, parmesan and diced pepperoni in a small bowl.
Slice the zucchini. Smear each slice with about a teaspoon of tomato paste and lay on the cookie sheet paste side up. Sprinkle with spices. Top with even amounts of the cheese mixture, pressing lightly to stick to the paste.
Broil for 2 minutes. The cheese should just start to get “crusty”.

I watched this video again tonight and just have to say how much I miss these! I still remember when Ryan was this little....so cute! Anyway, I'm making these this week and can hardly wait.

Hey Roni, thanks for the suggestion, made these and loved them!!
Alex
I make these often- they are SOOO yummy!! They definitely satiate my constant pizza craving!
Tamara
I made these tonight for a light dinner. My hubby and I leave for vacation in a couple of days so I'm trying to purge all of the perishables from the fridge which included two zucchini (makeing the Tortill-less Tortilla soup too) and oh my goodness....fantastic! Never would have thought of it, but love that crunch texture and pizza flavor minus the calories. What a great treat!

Pizza is an obsession of mine too! I'm so glad I found your site...and I am doing this tonight! I also love feeling like I'm cheating when I'm not! I guess I love feeling clever! lol

Good idea. I have recently discovered polenta. I like corn meal and just bought some. I didn't know it was core though! I'm still learning mu core list!
Thanks!
Christy
What about making these with polenta? I think it would work well with store bought premade polenta. For those on the Core plan polenta will not cost any points. You might have to spend points on the cheese if it is not fat free. I have not seen you use much polenta. Is it something you like?
roni
Thanks SO much guys!
MJJMmammi - I just use Flash. It has a built in movie control component when you choose FLV format.

What a great site!! Thank you for such wonderful, healthy ideas! Can I ask what program you are using to post your videos? Youtube has the time limit which drives me nuts 🙂 Thanks again for all you do.
Lorraine
Love Ryan in the videos. Mine are 8 and 10 and I miss the younger years.
Lorraine
Just made them now and I used spagetti sauce and they were one of the best pizza alternative things I've made. I will be making these alot as its quick yummy and very healthy and low points. Thankyou Roni.
Sandy
OMG!!! I have been in such a snacky mood lately so I made these for lunch (and ate the whole recipe!). They were unbelievably delicious!!! Thank you so much for all your great tips and recipes. I visit your site every day.

I am so glad I stumbled on your blog.. linking this with my blog... LOVE THIS RECIPE
Laura
Roni - I read your blogs daily and love watching your video posts. It is so fun to see your toddler get so involved, reminds me of my 6 yr old, she is always helping me in the kitchen! I have never met you but really feel like I know you because you are so personable in your blogs and in your video posts. Thanks for doing this for all of us.

These look great! I bet they would be good with eggplant, too. I'm going to try it this weekend.

I don't know which one I am impressed with more...the great job you are doing with this site or such a good kid Ryan seems to be. It was my first time watching your video but I will come back.

Roni-
I love your website- I check it daily! I think the video was sweet with Ryan helping you- it just proves that we can be a good Mom and still take care of ourselves too!
I have to tell you LOVE the Tortilla Pizza- YUMO!
Blessings,
Barb

This looks great! I can't wait to try it.
I love both your websites. I started WW in October and I think I am finally getting into the swing of things now. I am in the UK though, so our points values are determined by calories and saturated fat grams, as opposed to calories, overall fat and fiber. Can I be annoying and ask that you include saturated fat grams when you supply nutritional information for your recipes? When possible, of course.
Thanks!
Joy
Roni, that looks great! And Ryan is adorable & charming.
I'll be using eggplant, and can't wait to give this recipe a try.
Kath
Ryan is darling!! I'm totally making these when I can get some zucchini - we have leftover tomato paste in our fridge that needs to be used!

Anything that gets that pizza flavor and taste and smell and is low in points is a winner! And Ann is right...it does fit easily into the Core plan. btw...The Toddler is so well-behaved and a pro at sprinkling cheese!
Ann
I just found both of your sites and this video, tonight, while searching for new WW recipes. Awesome stuff! I am a pizza fanatic too; so I love this alternative. It should be easy for me to adapt to Core plan. Can't wait to try it. You are an inspiration!
