    I'm a HUGE fan of baked tortilla chips. Nothing beats a big ol' bowl of salsa and a bag baked chips. That was until... I found my new friends Baked Scoops! These are basically a baked plan tortilla chip shaped into a bowl. I mean COME ON! Nothing is screaming to be made into an awesome snack like these things (and no I wasn't paid to tell you that, just in case you wondering. I have no affiliation with FritoLay)

    So tonight while watching TV and craving something, anything. I decided to pass up the husband's chocolate chip cookies and the kid's Devil Dogs to make my own snack. I find that when I take the few extra minutes to actually make something and consciously include fruits or veggies, I am ultimately more satisfied then if I would have just grabbed a bag of chips or break open a box of cookies.

    Tonight this is what I did but remember the options are really endless. You can fill these things with all your fav veggies, beans, chicken, anything! So yummy!

    Ingredients

    • 1 oz/28g of Baked Scoops (I got 13 when I weighed them out)
    • 3 pepper stripes (I used 1 yellow and 2 green)
    • About ½ cup baby spinach leaves chopped
    • 1 tablespoon ready made salsa
    • ½ oz fancy shredded mexican cheese blend.

    Instructions

    Preheat the oven to 425 degrees

    Fill the scoops with the veggies, dab with a bit of salsa and top with cheese.

    Bake for 5-6 minutes.

      Wow looks yum! Imma have to try these. Another great orderve that my dad use to make around this time of year is as follows: Put a small block of cheese,green olive,piece of salami or piece of weiner(hot dog)per tooth pick. Make a nice display of them on a tray. these are super yummy!

      I just tried these as a snack for the football games and they are DELICIOUS. I hate I didn't try them before.

      Great idea!

      To save money and calories I use plain soft corn tortillas.
      Zap them - with a watchful eye - in the microwave for a minute or two until lightly brown.
      I could probably use a silicon cupcake or other mold to shape them into a cuplike form.

      These have always reminded me of baby taco bowls. I can do some serious damage with these and some TJ's Black Bean Dip. I like to dab some refried beans (FF of course!) and top with Quorn that has taco seasoning added to it, some shreds of cheese and tomato or taco sauce. Baby Taco Bowls! ( Quorn is my go-to meat substitute. I don't like the Veggie Crumbles)

      Oh my god I love this idea Roni! I'd probably have to cook up the peppers with some onions since I don't care for them raw, but its a great idea to add the spinach!

      Tostito Baked Scoops! and salsa have been our chip substitute for camping. What a great idea to add veggies and cheese and bake them! Yummers 🙂

      Great idea! I usually make these with black beans, salsa, sour cream, avocado, shredded cheese and lettuce.. But it gets pretty pointy so i usually make them as lunch. This is a great alternative though! =]

      Those look delicious! I love those scoops ... but I find that if I keep them in the house, I go through a ton of salsa. Guess that's not a bad thing, eh?

      I've never tried them with anything but salsa, though. This is a great idea.

      I'm definitely going to try these, the calorie count is good and the picture has completely sold me on the idea that they're going to be nothing less than awesome.
