I was making the toddler's lunch when I realized I had a pint of cherry tomatoes that were getting a bit overripe. I don't know about you, but I can't eat cherry tomatoes once they get all "wrinkly". For some reason, they gross me out! So I decided to make a little evening snack.
Boy am I glad I did. So simple, yet SO delicious. Plus you get a healthy oil in paired with tomatoes which is said to be a powerful combo!
Ingredients
- 1 teaspoon olive oil (5g)
- 1 pint cherry/grape tomatoes
- Kosher Salt
- Black Pepper
- Garlic Powder
- Onion Powder
- Basil or Italian Seasoning
- 1 tablespoon Parmesan Cheese (5g)
Instructions
Preheat the oven to 425 degrees.
In a small roasting or pyrex dish add the oil and swirl around a bit. Add the tomatoes and toss to coat. Sprinkle with spices and cheese.
Roast for about 18 minutes shaking once.
Transfer to a bowl making sure to get all the toasted spices and cheese. Allow to cool for a few minutes.
Enjoy!
Here's a little before and after cooking shot.

Keep an eye on them and pull them out earlier next time? Maybe your oven runs hotter then mine??
Not sure.

Aloha Roni.....found you on CNN and have been excited to start shedding the pounds! I had some grape tomoatos in the fridge already and decided to try this first! At the end of the 18 minutes tho, my poor tomotaos turned to mush and the juice filled the bottom of the bowl. Any reason why this happened? They still had the flavor but Im not much of a mush tomoato person. Suggestions?
Mahalo for now, Alani

FINALLY got to make these today and they are SO GOOD! I never would have thought of this, thank you so much for your creativity!

What a great idea! I can't tell you how many tomatoes I have thrown away because they get wrinkly.
You know what? These would be AWESOME cut up on a pizza!!!
Krista S.
I bet it tastes sorta like pizza! I also cannot eat wrinkly tomatoes. I don't really dig tomatoes cooked, but these look good enough to make me give them a try. You've changed my mind on so many things I used to say "yuck" to...this just might be another. Thanks, Roni.
Cathy
This is a GREAT idea for leftover cherry tomatoes. I usually end up with a bunch that go wrinkly. 🙂 Thanks!
Bonnie
Yum...these look and sound good. I guess I'll be picking up some cherry or grape tomatoes tonight too!

I do this but halve the tomatoes (of any size!) and set them in the dish cut side up so that the cheese/toppings stay on top better. I love tomatoes like this:)
Christie
I love that that is such a HUGE serving for only 2 points.

mmm that looks DELISH!
Susan
This looks great! I am going to try it tomorrow.
