
I love when simple things come together and make something spectacular, and this soup is simplistically spectacular!
I made it on a whim last night because I needed a reason to use the butternut squash that has been on counter and I'm glad I did!
To roast the squash all I did was cut it in half and bake at 350 until soft. Then I scooped out the flesh and did this...
Ingredients
- ~500g roasted butternut squash flesh
- 4 cups broth (I used chicken but you could use veggie)
- 1 can coconut milk
- 1 teaspoon garam masala
Instructions
Add the squash, broth, coconut milk and garam masala to a pot. Bring to a slow boil, lower to a simmer and puree with an immersion blender.
Done!
I just enjoyed a cup with a sprinkling of pumpkin seeds on top. Delicious!

When I plugged in the nutrition info into WW calculator it came up as 6 points! Not 3...is this correct? 6 points is still ok but I was so excited for the 3 points!

I use the nutritional info to calculate NI so I can't be sure it's correct and WW keeps changing the formula so honestly, I have no idea! Sorry

Got this in the email.. Linked to the site immediately as I had half of a roasted acorn squash in the fridge screeching at me to do something with it. This looks awesome! I haven't much been in the mood for coffee anymore, but I'm thinking this might be nice in the mornings. I have frozen butternut squash, bone broth and an almost full can of coconut milk- I'm going to cook this up in a few minutes to have on hand tomorrow morning. Thanks!
