Mini Spinach Egg Muffins - Video Post

Not that long ago I posted Mini Egg Muffins which I LOVED but the recipe made 4 servings and called for too many egg whites. Don't get me wrong I love that recipe and I'll make it again. It serves 4 with 6 muffins a piece! But I wanted something a bit quicker for just the toddler and I.

Using only 2 eggs you get two servings, 4 “muffins” each. You could, of course, eat the whole batch or double it to make more. Even replace the a egg with two egg whites. Just take the idea and run with it! We did! ;~P

 

Mini Spinach Egg Muffins

  • 2 eggs
  • 1 cup baby spinach chopped
  • 1 tbsp (7g) real bacon bits
  • 1 tbsp (5g) grated parmesan cheese
  • Kosher salt & pepper

preheat the oven to 375 degrees.

Whisk the eggs and spinach with a pinch of salt and pepper.

Using a tablespoon dollop the egg spinach mixture unto 8 mini-muffins. Preferably the silicone kind for NON STICKING! (I still can't believe how good this worked).

Sprinkle the Parmesan cheese on top and bake for 10-12 minutes.

Dip and ketchup and you are on our way!

    This is soo yummy and super easy, I added leftover salmon instead of bacon it was amazing!

    great idea...I had to make regular muffins, but, I may have to get a mini muffin pan just for this, since it took like 20 minutes and the bottom got all crispy in the regular muffin pan - great breakfast idea though 🙂

    Roni, I just had the GREAT fortune to find your web site last Thursday. I went to the grocery store THAT DAY and bought all of the ingredients I needed. On Sunday, my son made the mini spinach egg muffins and I made the healthy breakfast hash. And for dinner on Saturday, my son made the lemon sage chicken packs and asparagus. I made the stuffed mushrooms. My son said that the food smelled and tasted so healthy. We are BIG fans of yours. Waiting for your cookbook and food network show--no pressure :). We will buy your cookbook and watch your show!

    These are AWESOME! Take THAT quiche! I minced some mushrooms and added some onion powder. I know you said you aren't an onion person, but the powder adds just enough "oomph" to the flavor.I've made them everday this week and they keep me going till lunch.

    I love your videos but I have a suggestion. Have you thought about getting a clip on microphone? I have a Mac too and I am not sure what one would work well or be compatiable. The videos are always good. I just wish I could hear you better sometimes.

    Made these today - they are DELICIOUS! Just like little mini quiches!

    One thing I would suggest is maybe even leave out the pinch of salt. They already taste pretty salty with the bacon in the recipe.

    While eating these, I seriously felt like I was cheating - but I wasn't! They're yummy. Thanks for the inspiration...

    Wow, these are absolutely great. I tried these this weekend. I had little time to prepare a breakfast. But, these were quick to whip up and cook. I didn't have bacon pieces so I made it without. They still tasted delicious. I can't wait to make them again. Thanks for the recipe.

    OMG I love these! I made these all the time yrs ago. I found the recipe on the south beach diet site. I use spinach, chopped up green peppers, and brocolli. I love that you can make these with anything you like.
    I would make a lot, put in baggies and save them in fridge for quick snacks during the day.
    Thanks for reminding me of them again. I think I'll make some this weekend. 🙂

    I think this was your best video yet! Ryan was so cute. He did such a good job cracking the egg and spraying the pan. I also loved your kiss at the end. The muffins looked good too!

    You guys are so cute:). I'm a big fan of the egg muffins as well... they're so easy and so convenient when you have to grab something on the run. I recently tried the egg "pizzas" and loved them. I have been playing around with a 101 different combinations... I'll have to post one soon! Thanks Roni.

    Roni! You're at it again! (Being genius.) I do these a lot when I visit my parents back home - for some reason I am always in charge of brunch. I love the idea of adding spinach. Typically, I will use lean lunch meat or Canadian bacon to "line" the "muffins." I'm not sure if that makes sense or not. I really enjoy these because it's like you get your own personal frittata!

    What a great idea! These would be perfect for a pot-luck brunch. My family does Christmas Day brunch every year and we are always at a loss of how to do eggs so they aren't the time-consumming made-to-order kind and aren't a fattening casserole either. I can't wait 'till Christmas to make this though! I might make some this weekend with Eggbeaters.

    Roni,

    My husband and I have a Christmas Eve tradition with these. We make them for breakfast and we have tried different filling types...trading bacon for the lean sausage or last year I did the morning star sausage. Then our favorite cheese to top ours is shredded swiss. But most of all, the boys love them! Like you said above...take the idea and run with it...they are soo good!
