
I received an “Ask Roni” email the other day from Deanna requesting shrimp recipes so when I saw them at the grocery store tonight, I thought, humpf, Why not?
So upon returning from the store I whipped up a quick marinade, let the shrimp sit for about 20 minutes while I put the groceries away and then I grilled them on skewers.
To my surprise the husband offered up his dinner praises without being prompted. I almost fell out of my chair! He only had one complaint about the shrimp being hard to shell. Hey, I can live with that!
Ingredients
- 3 cloves of garlic run through a garlic press
- 1 teaspoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon honey (21g)
- Kosher Salt & Pepper
- 1 pound of uncooked shrimp (I used 26-30 count)
Instructions
Mix the garlic, oil, lemon juice, honey, and a sprinkle of salt & pepper in a medium bowl.
Add the shrimp to the bowl and toss to coat. let sit for at least 20 minutes.
Skewer the shrimp and grill about 3-4 minutes a side until pink all the way through.

Try broiling them about 4-5 minutes or toss in a skillet sprayed with non-stick spray over medium heat for 3-5 minutes tossing now and then.

Could I bake or cook these in a skillet??? If so, for how long or at what temp???

How funny, I searched your site for a shrimp recipe, and came upon the recipe that you put together after I requested one about two years ago. Damn, I've have LOST my mind but I did make these last night, and did not forget the olive oil this time, added a tad more honey...can we say DELISH!!! What's with me and Shrimp?

Hi Roni! First of all--you are beautiful! Secondly,going on the shrimp theme--might I divulge that I love goat cheese? But to the point:
I went to Trader Joe's and bought a package of turkey bacon; a bag of cooked, de-veined shrimp; a tub of crumbled goat cheese; some organic dates; jar of olives; and a bag of pineapple slivers.
*I pre-heated the oven to "broil" and sprayed some foil with olive-oil no-stick spray
*Cut the turkey bacon slices in half, length-wise
*split and de-pitted the dates
*finely chopped the olives and scooped into the pitted dates
*wrapped uncooked turkey bacon halves around the olive-stuffed dates and secured with a toothpick
*wrapped turkey bacon around 2 shrimp (with pinapple slivers in between them) and secured with a toothpick
*broiled in oven for a couple of minutes
had a bit of crumbled goat cheese (1/8 cup?) with the bacon-wrapped dates & shrimp
works great as a party appetizer OR as a dinner, perhaps atop couscous???
Just guesstimating the WW points:
per bacon wrapped date (with goat cheese and olives): 1.5 points
per bacon wrapped shrimp (with goat cheese and pineapple): 1.5 points
very gourmet! tasty & satisfying!! (and quick!) also works with scallops, atop seasoned rice, etc. Trader Joe'sweet chili sauce is also good with this, and is >1 point per serving.

Roni I've only recently started lurking here to find good healthy recipe ideas and have a quick question about the marinade. I love lemon juice but was wondering if you think that a tablespoon of lime juice would be a good substitute? I have a lot of it and thought this might be a good instance when it could stand in. Anyway, they look very yummy!

This recipe sounds really good. I have made shrimp skewers before and i love them for a good, satisfying WW meal! They are so low in calories. I would also love to see more shrimp recipes.
I make a shrimp pasta using whole wheat linguine and saute the 1 pound bag of frozen shrimp in 2 tbsp olive oil and 2 tsp minced garlic. Then drain the pasta, toss in the olive oil and shrimp, top with fresh chopped parsley and serve with a green salad. Can also add chopped roma tomatoes for a completely different taste.
