    Ham Salad in a Pinch

    I am seriously on reserves in my house. The fridge is EMPTY. I don't even have a bag of spinach or baby carrots, 2 things I'm rarely without.

    Thankfully my pantry is normally pretty stocked and that includes my freezer. I pulled out a baked ham for dinner the other night and have frozen bags of peas and broccoli for backups.

    My family loves ham. I know it's not the least process meat choice out there but it's lean, quick, easy and a total crowd pleaser. We make one about 1-2 times a month and love the leftovers for quick lunches.

    The boys just eat it cubed, but yesterday I decided to have a little fun. Using just a few ingredients…

    I made a yummy ham salad that tasted totally indulgent, but it's super light!

    Here's what I did...

    Ingredients

    • ¼ cup frozen peas
    • 2 oz cooked ham cut into small cubes
    • 2 wedges of The Laughing Cow Light Garlic and Herb
    • 1 teaspoon Whole Grain Mustard (5g)
    • Dried Parsley for Sprinkling

    Instructions

    Put the frozen peas in a cup with some hot tap water while you prepare the rest of the ingredients. They will defrost in moments and be ready to eat.

    Put all the ingredients in a small bowl. (note: I added my second wedge of cheese after I took the photo)

    Combine well.

    Done!

    This wold be great in a pita, on a lettuce wrap, or even an english muffin, but alas, I had none of those things. All I could find was an aging cucumber leftover from Thanksgiving. Yeah, Thanksgiving. It was on it's last legs so I sliced what I could of it up and used it to serve my fun lunch.

    The sprinkle of parsley brought it all together. 🙂 In my opinion, pretty food is satisfying food.

      I don't use baby carrots. Many people believe they are good for you. They are just sugar. I will use regular carrots and cut them.

      I usually have frozen peas on hand. i will buy cream cheese on special and walk to my herbs growing in my living room and snip some garlic chives from my plants. I will make my own mayo too.
