Fun, Light Holiday Appetizer - Mini Babybel Bites

My first Ugly Sweater Christmas party is tomorrow! I'm so excited! I haven't thrown a party in years. Before I had kids I used to be Ms. Host. Don't misunderstand, they weren't Martha Stewart-like cocktail parties -- I'd just invite everyone I knew over and we'd end up playing some kind of college drinking games (anyone else a beer pong fan?) until the wee hours of the morning.

Now? I have toddler birthday parties here and there and the family over for the holiday but it just isn't the same. I miss having a house full friends all mingling and having fun. So depending on the success of tomorrow's Ugly Sweater party, I'm hoping to make it a yearly thing.

I'm actually ordering most of the food because I have no time at the moment to cook for 20 people but I will be cutting veggies for a platter and I decided to make a tray of these fun appetizer bites …

Mostly for me but it will be fun to see who else goes for the cucumber and cheese bites.

Fun Light Holiday Appetizer - Mini Babybel BitesHere's the base "recipe" for 1 serving of 9. Double, triple, whatever!

  • 1 Mini Babybel Light
  • 3 cucumber slices, cut ½ inch thick
  • Handful of dried cranberries
  • 9 toothpicks

Cut the Babybel into 9 chunks.

Cut the cucumber slices into quarters.

Pierce 2-3 dried cranberries on a tooth pick, then add the cheese, poking the tooth pick through. Stick the tip of the toothpick into a cucumber chunk and stand up.

That's it! So easy and no cooking involved.

I love that they have a touch of green and red for Christmas.

Note: these also make a great midnight snack. 🙂

    I went to a "grown-up party" (keep in mind, I'm in my 30s, as are most of my friends) a few weeks ago and randomly, after a very lovely dinner we started to play A**hole, remember that one? Let me tell you, it was great fun at the time, (thought 2 trays of those lovely cucumber cheese things would have made it even better!) but the next day I was handsomely reminded that I am indeed, in my 30s now. 🙂
