Have I ever confessed my LOVE of cheese and crackers to you? Give me a hunk of cheese (cheddar, jack, muenster, whatever,) a knife, some crackers and I'm in heaven. I like it so much I stopped buying blocks of cheese. I'm serious! I can't be trusted with them in the house. I can easily put down the whole thing! I have no cheese shut off valve. I really don't.
With all this feta in the house I had to try upgrading my traditional love of cheese and crackers. My strategy for combating my gross overindulgence of cheese is to make a pretty snack plate instead of grabbing a knife and going to town. So I took the feta, a roasted red pepper and made myself this simple snack. Oh my... So tasty! Would be fun for a party, no? 🙂
Ingredients
- ½ serving of Triscuits thin crisps (7 crackers)
- 1 oz feta cheese (2 thin slices)
- 1 jarred roasted red pepper
- Sprinkle of dried parsley
Instructions
Lay out the crackers.
Cut the cheese into small pieces matching the number of crackers. It won't be much but you don't need much! The feta flavor is great.
Cut the roasted red pepper into small pieces as well.
Top the crackers with the bit of cheese, a piece of the roasted red pepper and a sprinkle of parsley.

My trick is to keep a low-fat cheese and eat it with veggies instead of bread/ crackers. Like your zucc pizza, but go further - on eggplant, cucumber. It's a reasonable mix of fat/ protein.

Oh yummy! I love cheese, too, but I tend to buy really sharp/flavorful varieties so I can be satisfied with one serving. The Triscuits, on the other hand....dang...I could wipe out a whole box in a sitting.
