Sweet Potato Scramble

You may or may not know I’ve returned to Weight Watchers. Now that I’m counting points I try real hard not to fall into the rut of eating cereal every day. Sure, it’s easier to weigh out a serving and count but I’d much rather a warm breakfast with less processed foods.

This morning I decided to revisit an old idea I had for Sweet Potato Hash. I turned it into a complete breakfast by adding eggs. It was a great way to start my day!

I used 1 egg and 1 egg white but you could use all eggs, egg beaters or only whites. Whatever your preference is.Sweet Potato Scramble I wasn’t sure I’d like the egg with sweet potato but it’s really a nice combo–especially dipped in ketchup! ;)

Make the Simple Sweet Potato Hash and then remove half from the skillet.

Scramble the egg and egg white together with a bit of kosher salt and pepper.

Add egg mixture to the potatoes in the skillet.

Once the eggs begin to set, stir a spatula. Cook until eggs are completely set. Serve immediately.

    Made this this morning. Yum. I just left it in the skillet, cracked on egg over it and let it cook for a few minutes. Came out like a poached/unfried fried egg. Broke the yolk (because I like them a little underdone) and it was fabulous. I was giving it a chance and so glad I did. Then I had the second half for lunch, no egg. Very happy right now. Thanks for sharing.
