Double Chocolate BlueBran Muffins

I miss baking. :( With my full time job I haven’t had time experiment like I used to. So when the little guy asked to make muffins the other day I hit the pantry, used a mix and put my own spin on it to appease the "from scratch" gene my mom passed on.

We used another VitaMix from Vitalicious. This time the BlueBran. Alone it’s good but not my favorite. It’s super sweet with a very bran texture which is fine but I thought adding a little chocolate would make it even better. I’m happy to say I was right. ;)

The toddler and I have been snacking on these for a few days. The size is right, the cocoa powder balances the sweetness and the additional blueberries and chocolate chips give you a surprise in every bite.

Here’s what little guy and I did…Double Chocolate BlueBran Muffins

  • 3 egg whites
  • 1 1/4 cup water
  • 1 box of BlueBran VitaMix (Muffin Mix)
  • 4 tbsp Dark Chocolate Unsweetened Cocoa Powder (20g)
  • 1/2 cup frozen wild blueberries (70g)
  • 2 tbsp mini chocolate chips (28g)

Preheat the oven to 400 F.

Line a standard 12 cup muffin pan with baking cups.

Whisk together the egg white and water until frothy.

Add the Mix, cocoa powder, chips and blueberries to the egg whites and mix well.

Scoop about 3 tablespoons of batter into each baking cup.

Bake for 23-27 minutes until firm.

    I am scared to try anymore vitamix things- I got a mix for their brownies and I hated it. Me, my husband, and sister agreed it was like eating a vitamin (wasn’t very tasty). Maybe I got a bad batch or maybe the taste is just wrong for me or something because everyone else seems to love their products. Maybe one day I’ll have the courage to try a muffin mix.

    Roni, these look delicious. I’ll definitely give them a try. Nicole, I’m a fan of the Vitalicious products but can’t stand the brownie mix either. On the chocolate side, I think that the chocolate muffin mix (with a few chocolate chips added) and the dark chocolate pomegranate brownies (not a mix) are very good.

    Nicole – I do think these are hit or miss with a lot of folks. I do like the brownie ones too. This blueBran mix has a funky texture and is really sweet.

    Out of all the mixes I agree with Lori, the choc muffin mix is the best. I also like the corn but it’s real sweet too. I’m not a fan of the banana nut at all! It has a real nasty aftertaste.

    I’m a fan of the banana nut mix. I do doctor it up though (add a mashed ripe banana, a teaspoon of vanilla extract, and 1/2 cup walnut or pecan pieces).

    That’s a good idea! It may help the artificial sweetener taste.
