Watermelon Ice

I came up with this idea last year when I was craving a sweet treat but didn’t have anything on hand. This kind of snack is the best because I truly believe…

1.) It’s utterly more satisfying when you make something yourself.
2.) Waiting for that snacks makes it all the more satisfying in the end.

I’m typing this up, licking my lips in anticipation of my night time snack. Now when I say waiting, I mean waiting about an hour and that’s a long time to wait for snack, especially a single serving of a snack. But it’s worth it, in that hour I could have raided my pantry and regretted chowing down a bag of chips or one of the husbands chocolate cupcakes. Instead I got up every 20 minutes and stirred my bowl of watermelon ice sneaking taste during the freezing process. Watermelon Ice

An now I’m enjoying my snack before bed and I can feel good about my choice. No regrets here!

  • 1 cup (152g) of cubed watermelon
  • 1 container of light yogurt the 4-8oz non-fat flavored kind (I used strawberry)

Place the watermelon and yogurt in the blender. Puree.

Pour the mixture in a bowl and place in the freezer for an hour to an hour and half. Stir it about every 20 minutes to help it freeze uniformly or the edges will freeze solid and the center will still be liquid.

Enjoy!

The nutritional info will vary based on the brand of yogurt you choose.

Update: If you do accidentally freeze it totally, it takes a long time to defrost. I think I had it one the counter for two hours before soften enough to eat!

    Very cool idea. It’s kinda of like a granita. I have such a terrible sweet tooth and I’ve been thinking about doing a chocolate sorbet/granita to satisfy it (and my very rare craving for chocolate) for low points. I am wondering if Splenda will act the same way regular sugar would, though. Guess I can only experiment this weekend and find out!

    I love this idea. Do you think it would work with other fruits as well?? Hmmmm, I may have to do a little experimenting, although watermelon does sound pretty dang good!

    Michelle – Hmmmm Blueberries. Not sure it will work out the same as the watermelon has so much water in it. But hey! It doesn’t hurt to try!!! :~)

    Dani – Not sure as the watermelon has the most water, but I’m not against trying a few others. I’ll let you know how they come out of course! ;~P

    Hi Robyn!

    The 4-8oz ounce kind. Like the single serves of Dannon or Yoplait. I’ve used a 4 oz and an 8 ounces (different brands have different sizes and I buy whats on sale) both came out yummy!

    I made a double batch, YUM! Takes longer to freeze, so next time I will put it into two smaller bowls. But well worth the wait. I used strawberry 2 pt yogurt as well.

    Holly – Glad you liked it! Yeah a double batch would take longer. Also, I forgot to mention if you let it freeze completely it will take FOREVER to defrost. It becomes a solid piece of ice! lol

    But since it had 3 Points, I only ate half. Wish I’d seen your comment about freezing solid before I left it in the freezer overnight.

    Totally lame question but I need to know because I want to make it. What size container yogurt do you use? A large 32oz or a single serving 8oz?

    I’ve used the 4, 6, and 8oz of flavored yogurts like Danon, Breyers, etc. They all worked!

    I made this last night!!! I used fat-free 6 ounce Raspberry, but I got fruit on the bottom yogurt by accident – wouldn’t get it again. Oh MY goodness, LOVED IT!!! and my Toddler helped, that was awesome too. It was definitly satisfying to make and than eat, just like you said. Next time I will do it earlier because it took a long time to freeze. I also had some this morning as breakfast – hey it’s fruit and yogurt!!! Can’t beat that with a bat!! I CAN NOT wait for your cookbook. It will be in print form right??? Going shopping today to make some more of your recipes, you are making my transition to cooking healthy easier. I started the weight loss with cutting back, and exercising and NOW I have to incorporate better, clean foods -you are making it easy for me!! Thanks!! Sorry this is so long ! : )
