Creamy Berry Oatmeal

With all this sweetener talk, I thought I’d take my hand at making my own oatmeal. Not that I haven’t made my own oatmeal before but normaly, I rely on a pre-made packages that are chock full of artificial sweeteners like ones I use in Apple Pie Oatmeal.

Unfortunately I couldn’t get the toddler to give it a try. I think he’s entering the stage of food familiarity where he only eat what he knows. Who knows? I think he’ll come around. It was GOOD and oh so FILLING!Creamy Berry Oatmeal

  • ½ cup (40g) of quick oats
  • 4 oz boiling water
  • ¼ cup non-fat yogurt
  • 1 tbsp honey
  • ½ tsp raspberry or strawberry extract
  • 4-5 strawberries cut in small pieces
  • Handful of blueberries

Let the quick oats sit in the boiling water while you prepare everything else (about 3-4 minutes).

Mix the yogurt, honey and extract together. Add in the berries and cooked oatmeal.

Serve!

    That looks beautiful! I’ve been eating oat bran a few days a week in between oatmeal days. It is so smooth and creamy and filling. My favorite version was stolen from the one favored by (http://www.katheats.com/?p=1919). She adds a banana to the hot cereal and then tops it with almond butter, a few nuts and a drizzle of honey…yum!

    I also love yogurt and honey with oatmeal and any kind of naturally sweet fruit. We’re all eating better these days, aren’t we? I’m so inspired by sites like yours and Kath’s…people who are at their ideal weights and continue to explore the nutritional side of what they are eating and creating beautiful and delicious meals that we all want to eat just because it is good food! Brava!!!

    This looks so yummy! I’ll have to try adding yogurt to mine and sweetening with honey. Have you tried steel-cut oatmeal (also called Irish Oatmeal)? I just discovered it after hearing Dr. Oz talk about it on Oprah. It has a slightly more crunchy texture and is very filling!

    I tried this recipe this morning and it turned out really well. I didn’t have any yogurt on hand so I used fat free milk so mine isn’t quite as creamy. I will definately try it with the yogurt next time.

    Yes Roni….you’ve got to try steel cut oats. Oh my gosh…I got some last weekend at the local health food store, and they are SO yummy. Very chewy…takes longer to eat, so Yayyyyy! They take longer to cook, but what I did last week, was made 2 servings while I was cooking dinner…it was no trouble, and I then poured it into 2 serving dishes with lids, and once they cooled, I put them in the fridge. Twice then, last week, I grabbed a bowl and took it to work with me, added a little water, and popped into the microwave. Then I added blueberries (and sweetener, but you could use honey) and ate…yummmy.

    Your recipe sounds delightful…I’m going to try it, but with steel cut oats. Of course, I love ALL your recipes! Thanks a bunch!

    I know what you mean about the quick of the quick oats. What I do with the Steele cut is after I clean my kitchen for the night I toast my 1/4 cup of Steele cut oats with either EVOO or nonstick spray and then add hot water (I use more than the package says.) I bring it to a boil and then turn off the heat and let it sit overnight. While I get ready in the morning I turn it on and it cooks much faster that way. I also add fruit to mine. Frozen blueberries are my favorite.

    I make my Steel Cut Oats in the slow cooker. They are great! Give them a try.

    I am spoiled…I buy the Trader Joes Steel Cut oatmeal in the freezer section. Two servings are $1.59 and so worth it. It’s a frozen hockey puck that you pop in the microwave for about 2 or 3 minutes…flavored with a touch of maple and brown sugar….sooooo good….it’s my new fav!!!

    With the irish oatmeal you can cook it in a slow cooker overnight. You can put dried fruit in it too.
