I am so excited to relaunch GreenLiteBites after more than a year hiatus.
For those that don’t know, I blogged my 70lb weight loss way back in 2005. In 2007, I launched GreenLiteBites as a spin-off of sorts. It was my place to geek out about food and geek out I did. For ten years I posted multiple recipes a week, cooking videos, produce picks, baby food adventures, and school lunch ideas. I shared what my family and I were eating and LOVED doing so.
In 2017 I accepted a full-time position and went back into the traditional working world. All my blogs suffered, and after much consideration, I decided to take them down. The weight of managing over twelve years of content across multiple websites became too much for me.
At first, there was a sense of relief when I deactivated them, but it wasn’t long before I craved the creative outlet I once I had. I missed taking photos, sharing my ideas and telling stories about my family.
Now I’m back!
I’m starting small, so the site is more manageable and has minimal expenses. I’ve reposted a handful of my old ideas under the category Vintage GreenLiteBites and will continue to do so while posting new ideas like this Mild Turkey Chili.
I’ve been making this chili for a few months now, and most of the family loves it. I purposefully keep it mild for The-7-Year-Old, but as you may remember, he’s the picky one. I’m going to wear him down sooner or later but as of now getting him to eat anything like this is still a struggle. The 13-Year-Old and The Husband, however, both enjoy this simple chili with a dash or two of their favorite hot sauce.
Before I get into the recipe, I need to express how happy I am to be back. If there are any recipes, you’d like to see from the old site let me know in the comments, and I’ll do my best to re-post. Also, I’ve launched a GreenLiteBites IG account, reactivated the GreenLiteBites Facebook page and started a group, so we have a place to chat about food whenever we want.
I’ve also added a new “By Diets” category where I will attempt to categorize ideas appropriately. If you ever notice a recipe mislabeled or not labeled when it should be, please don’t hesitate to let me know. I tend to cook with an eye on my macro’s, but as always I focus on fruit, veggies and lean meats with simple ingredients. That said, I don’t demonize any food so I may surprise you now and then, especially now that The Husband is cooking with me. That’s right, he started cooking! I talk about it a little on the about page.
Okay, I knew I’d end up blabbing! I promise I will focus on food here more than anything else and every post will end with a recipe just like the one below.
Mild Turkey Chili
Yield 6 cups
Steel cut oats help thicken this super simple, mild turkey chili.
- 1lb lean ground turkey
- 1 sweet onion
- 2 heaping tbsp ground cumin
- 1 heaping tbsp dried oregano
- 1 small can diced green chilis (113g)
- 1/2 cup steel cut oats
- 2 cups chicken broth or stock (I use homemade)
- 1 15oz can cannellini beans drained and rinsed
Brown the turkey with the onion in a medium-large pot.
Add the rest of the ingredients and raise the heat to bring to a low boil.
Lower to a simmer and cook until the chili begins to thicken (at least 20 minutes.)
- For a less mild chili add a tsp of red pepper flakes.
- If you don't have steel cut oats any oats would work to help thicken.
- Up the veggie count by adding diced zucchini, bell peppers or eggplant.
- Great with fresh cilantro on top!
