Hearty Black Bean and Corn Salsa from the Pantry

Last night was taco night! I love family taco night. It’s super fast and easy to make lighter and healthier by adding tons of veggies. You can check out some of my tricks by clicking here for my basic Taco Night post or click here to watch my taco night video.
With the tacos I usually like to make at least one side dish that actually ends up being my taco filler as it’s usually bean based like Spicy Black Beans and Zucchini. Well last night was no different except I had a craving for crunchy chips dipped in salsa. So I decided to make a hearty salsa/taco filler with what I had on hand. This is what I came up with. . . 
- 1 15oz can black beans drained and rinsed
- 1 15oz can diced tomatoes (preferably petite but I didn’t have any)
- 1 7oz can corn drained
- 1 green bell pepper diced
- 2 thinck slices of sweet onion diced
- 2 tsp lime juice
- 1 tsp tabasco sauce
- 1 tbsp dried cilantro
- 2 tsp chili powder
- 1 tsp dried cumin
Combine all ingredients in a large bowl, cover and let sit in the fridge for at least 20 minutes.
We dipped baked scoops in it and used it as salsa on our tacos. Actually I used it as my taco filling. I didn’t even miss the meat. ;)
I loosely measured out 9 1/2 cups so I’m going to use that as a serving.

Is that avocado in there or is that just a really light green colored bell pepper I see in the picture? Love the bowl its really snazzy with the sage green and black colors.

That’s just a pepper BUT avocado would be a great addition. I just usually don’t have any on hand.

This looks so good. Sounds so fresh and tasty. I have bean looking for something like this and I think I’m gonna make it tomorrow night.
Ok – so I made a version of this – used 1 can of Rotel and an extra can of diced tomatoes. I had NO bell peppers on hand – but that’s ok – it was delish! I actually put it on a hot dog as relish and YUM! Tomorrow I will be using my baked tortilla chips with this salsa and cottage cheese – I can’t wait!
I loved this! It was so quick and so easy! I used it to dip my whole grain tortilla chips and it was great! I want to try this as a base for soup sometime – I think those ingredients would be great! Also thinking of adding some chicken/rice something or other to make a quick casserole (or again, the soup!). Thanks for this recipe! I will make it again!
