Creamy Apple Pie Oatmeal From Scratch

Ingredients
  

  • 1 small apple with skin chopped
  • ½ teaspoon lemon juice
  • teaspoon kosher salt
  • 1 teaspoon cinnamon
  • ½ teaspoon ground nutmeg
  • teaspoon ginger
  • teaspoon allspice
  • 1 cup water separated
  • ¼ cup liquid egg whites or more for more protein
  • ½ cup 40g dry old-fashioned oats
  • Handful of chopped almonds dash of cinnamon and a drizzle of honey (optional)

Instructions
 

  • Put the apple, lemon juice, salt, cinnamon, nutmeg, ginger, allspice and ½ cup of the water in a small pot. Bring it to a boil over medium heat and continue to cook for about 10 minutes.

  • After 10 minutes smash with a fork.
  • Add the additional ½ cup of water then stir in in the egg white and oatmeal. Continue cooking over medium heat for about 3 minutes until thick. Transfer to a bowl.

  • I decided to top with a little crunch and a touch of sweetness by adding some chopped almonds and a drizzle of honey. It was a huge bowl of oatmeal awesomeness.
