Add a splash of water to the goat cheese with a pinch of salt and pepper and mix until creamy. Add additional water to get to the consistency you like.
1 oz crumbled goat cheese, pinch of salt and pepper, 1-2 tablespoon of water
Drizzle the goat cheese on top of the salad.

Notes
I used one of the precooked pillow packs of beets. Works great and easy to keep on hand. Canned beets would work too!
I usually keep a cooked turkey breast on hand for a quick protein option but any cooked chicken or turkey would be great in this.
