Beet, Carrot, and Turkey Salad with a Goat Cheese Drizzle is the fastest, tastiest salad ever! All you need is five minutes and five ingredients.

Ingredients
  

  • 4 cooked beets
  • 4 oz cooked turkey breast
  • 1 carrot
  • 1 green onion
  • 1 oz crumbled goat cheese
  • pinch of salt and pepper
  • 1-2 tablespoon of water

Instructions
 

  • Quarter the beets, then half each quarter.

  • Cut the turkey into bite-sized chunks.
    4 oz cooked turkey breast
  • Chop the carrots small.
    1 carrot
  • Chop the green onion.
    1 green onion
  • Arrange all the cut ingredients on the plate.
  • Add a splash of water to the goat cheese with a pinch of salt and pepper and mix until creamy. Add additional water to get to the consistency you like.
    1 oz crumbled goat cheese, pinch of salt and pepper, 1-2 tablespoon of water
  • Drizzle the goat cheese on top of the salad.
  • Enjoy!

Notes

  • I used one of the precooked pillow packs of beets. Works great and easy to keep on hand. Canned beets would work too! 
  • I usually keep a cooked turkey breast on hand for a quick protein option but any cooked chicken or turkey would be great in this.
