  • Preheat the boiler.
  • Lay the tortilla on a strip of aluminum foiled and brown in the oven for about 5 minute to get it crispy.
    1 tortilla
  • Whisk the egg and egg white together with a pinch of salt and some black pepper.

  • Spray a non-stick frying pan with non-stick cooking spray and heat over medium-high. Add the spinach and bacon bits and cook until wilted.
    Handful of baby spinach chopped, 1 tablespoon bacon bits
  • Check on the tortilla!
  • Add the eggs to the pan and scramble by continuously turning with a spatula.
  • Spread the salsa on the crisp tortilla. Top with the eggs and sprinkle on the cheese. Pop back into the oven for about 1 minute.
    ¼ oz shredded cheddar cheese, About 2 tablespoon store bought salsa
