Instructions
Heat a non-stick skillet over medium high heat and spray with non-stick cooking spray.
Lay the tortilla in the skillet sprinkling half of it with ½ of the cheese. Add the turkey, brussels sprouts and dried cranberries, top with the remaining cheese then fold over. Weigh it down with something like a kettle full of water and cook for about 2 minutes.
1 Large Tortilla or Flat Bread, 1 oz gouda cheese grated, 2 oz leftover turkey, 1-2 leftover roasted Brussels sprouts, 10 g of Dried Cranberries
Flip and cook the other side for an additional minute until the cheese is melted and the ingredients are warmed through.
I served it with a quick side salad for a complete lunch.
