Ingredients

  • 1 Large Tortilla or Flat Bread
  • 1 oz gouda cheese grated
  • 2 oz leftover turkey
  • 1-2 leftover roasted Brussels sprouts or a handful of spinach or salad greens would be great
  • 10 g of Dried Cranberries or a smear of cranberry sauce chopped

Instructions

  • Heat a non-stick skillet over medium high heat and spray with non-stick cooking spray.
  • Lay the tortilla in the skillet sprinkling half of it with ½ of the cheese. Add the turkey, brussels sprouts and dried cranberries, top with the remaining cheese then fold over. Weigh it down with something like a kettle full of water and cook for about 2 minutes.
1 Large Tortilla or Flat Bread, 1 oz gouda cheese grated, 2 oz leftover turkey, 1-2 leftover roasted Brussels sprouts, 10 g of Dried Cranberries
  • Flip and cook the other side for an additional minute until the cheese is melted and the ingredients are warmed through.
  • I served it with a quick side salad for a complete lunch.
