Kale, Pear and Hummus Wrap

Ingredients
  

  • 1 thick slice of sweet onion chopped
  • 2 cups of kale chopped 80g
  • 1 ripe pear cubed
  • kosher salt
  • 1 tablespoon bacon bits 7g
  • 1 large low carb tortilla I used a La Tortilla Factory Smart and Delicious
  • 2 tablespoon hummus 28g

Instructions
 

  • Brown the onion in a non-stick skillet over medium-high. Add the kale and the pear with a pinch of salt to help draw out the moisture.
    1 thick slice of sweet onion chopped, 2 cups of kale chopped, 1 ripe pear cubed, kosher salt
  • Toss every few minutes as the kale wilts down. Add the bacon bits and cook until the kale is soft and tender and the pear begins to brown.
    1 tablespoon bacon bits
  • Meanwhile smear the hummus on the tortilla
    1 large low carb tortilla, 2 tablespoon hummus
  • Top with the kale/pear mixture.
  • Roll like a burrito and enjoy!
