- 1 thick slice of sweet onion chopped
- 2 cups of kale chopped 80g
- 1 ripe pear cubed
- kosher salt
- 1 tablespoon bacon bits 7g
- 1 large low carb tortilla I used a La Tortilla Factory Smart and Delicious
- 2 tablespoon hummus 28g
Brown the onion in a non-stick skillet over medium-high. Add the kale and the pear with a pinch of salt to help draw out the moisture.
1 thick slice of sweet onion chopped, 2 cups of kale chopped, 1 ripe pear cubed, kosher salt
Toss every few minutes as the kale wilts down. Add the bacon bits and cook until the kale is soft and tender and the pear begins to brown.
1 tablespoon bacon bits
Meanwhile smear the hummus on the tortilla
1 large low carb tortilla, 2 tablespoon hummus
Top with the kale/pear mixture.
Roll like a burrito and enjoy!
