Ingredients
  

  • 4 oz whole wheat pizza dough rolled in a thin oval
  • 1 oz shredded mozzarella cheese part skim
  • cup diced green peppers
  • cup diced red peppers
  • cup diced zucchini
  • Large handful baby spinach loosely chopped
  • Leftover sauce for dipping or your favorite jarred stuff

Instructions
 

  • Preheat oven to 425 degrees.
  • Prepare the the fillings by dicing up all the veggies (notice the toddler stealing my peppers!)
  • Measure out 4 oz of the pizza dough and roll it out. Sprinkle a bit of the cheese on the one side. Place the peppers, zucchini and spinach and top with the remaining cheese.
    4 oz whole wheat pizza dough rolled in a thin oval, 1 oz shredded mozzarella cheese, ⅛ cup diced green peppers, ⅛ cup diced red peppers, ⅛ cup diced zucchini, Large handful baby spinach loosely chopped
  • Fold over the dough to make a pouch and seal the ends. Pierce the top with a knife to let the air escape.
  • Bake for about 10-15 minutes on a pizza stone (or a cookie sheet sprayed with non-stick spray) until the dough is firm to the touch.
    Leftover sauce for dipping
