Leftover Meatball Wrap

No need to throw away those leftover meatballs – wrap them up in a tortilla with some fresh veggies and enjoy a delicious lunch on-the-go

Ingredients
  

  • 1 whole grain/low carb tortilla
  • About 1 cup baby spinach leaves
  • 2 leftover turkey meatballs with a bit of sauce on them
  • ½ oz finely shredded part-skim mozzarella cheese

Instructions
 

  • Cut the meatballs in half and warm in the microwave for about 30-45 seconds.

  • While the meatballs are warming, lay out the tortilla on a plate and top with the baby spinach leaves. When the meatballs are done, place them on top of the spinach.

  • Sprinkle with cheese (and yes that is only ½ oz pictured, I told you that fancy shredded stuff is great!) and pop in the microwave for about 10 seconds to warm the tortilla and help melt the cheese.
    ½ oz finely shredded part-skim mozzarella cheese
  • Roll up and serve!
