Treat yourself to irresistible dessert goodness with these raspberry chocolate waffle cups. Crunchy and sweet, they're the perfect way to end any meal.
1quartfresh raspberries or mixed berries of choice
1cuplow-fat/sugar-free whipped toppingoptional
12fresh mint leaves for garnishoptional
Instructions
Preheat non-stick waffle maker. In a large bowl, combine and mix all ingredients except raspberries, topping and mint.
1 package Deep Chocolate VitaMix, 1 teaspoon baking powder, 2 cups water, 2 large egg whites, 1 tablespoon canola oil, 1 cup low-fat/sugar-free whipped topping, 12 fresh mint leaves for garnish
Prepare waffles following waffle maker directions. When done, immediately drape each hot waffle over a custard cup (I used cup turned upside-down) a and allow to cool. Waffle will form a cup.
Fill each cup with raspberries (I used strawberries, raspberries and blueberries), top with whipped topping and garnish with a mint leaf. Chocolate cups can be frozen for later use.
