Ingredients
  

  • 1 teaspoon 4g olive oil
  • 1 tablespoon 16g tomato paste
  • ½ tablespoon balsamic vinegar
  • 1-2 tablespoon water
  • ½ teaspoon garlic powder
  • ½ teaspoon dried basil
  • Kosher salt & pepper
  • About 2 cups your favorite greens I used baby spinach
  • of green bell pepper sliced
  • 1 medium mushroom diced
  • 3-4 raw broccoli florets
  • 6 cherry tomatoes
  • 1 oz fancy shredded mozzarella cheese
  • ½ oz 30g turkey pepperoni sliced thin

Instructions
 

  • In a small bowl, whisk the olive oil, tomato paste, vinegar, 1 tablespoon of water, garlic powder, dried basil and a pinch of salt & pepper. If you need to thin it out a bit add another tablespoon of water.

  • Pile the greens, mushrooms, peppers and tomatoes on a large plate. Sprinkle the pepperoni and cheese on top. Drizzle with tomato paste vinaigrette.
