  • 1 Whole Grain/Low Carb tortilla
  • 2 tablespoon 33g tomato paste
  • Kosher Salt
  • Black pepper
  • Dried Oregano
  • About ½ cup baby spinach leaves
  • 2 roasted red peppers
  • ¼ cup Athenos Tomato Basil Feta

Instructions
 

  • Preheat the oven to 425 Degrees.
  • Place the tortilla on a piece of aluminum foil abd bake for about 5 minutes until it gets toasted. Set up your station...

  • Smear the tomato paste on the toasted tortilla and sprinkle with salt, pepper, garlic powder and dried oregano. Just a pinch or 2 of each.
    2 tablespoon 33g tomato paste, Kosher Salt, Black pepper, Dried Oregano
  • Top with the spinch leaves.
    About ½ cup baby spinach leaves
  • Lay the 3 slices of roasted red peppers on top.
