Ingredients
  

  • A Sandwich Thin or 2 slices of whole grain light bread
  • 2 tablespoon hummus
  • 3 sun-dried tomatoes
  • Baby Spinach leaves
  • 1 oz ATHENS Black Peppercorn Feta in 2 slices

Instructions
 

  • Smear the hummus on the bread. Top with the tomato, then spinach, then feta.

  • Now, you could just eat it like that OR press it in a panini press or the George Forman. I just heated a skillet over medium high heat, sprayed it with non stick olive oil and placed it cheese side down. The I pressed it with a full tea kettle for 1-2 minutes.
