Simple Sweet Potato Soup is full of flavor from the caramelized sweet potatoes and thyme. Enjoy straight up or use it as a base for your favorite toppings.

  • Heat a soup pot over medium-high. Add the oil, onion, sweet potatoes, salt, and thyme. Saute until the onion softens, and the sweet potatoes start to carmelize -- about 5 minutes. The bottom of the pan may stick a bit. That's ok.
    1 tablespoon olive oil, 1 sweet onion, 3-4 sweet potatoes, pinch of salt, 1 teaspoon dried thyme
  • Add the broth and bring to a soft boil. Then lower to a simmer and continue to cook until the sweet potatoes soften -- about 15 minutes.
    4 cups broth
  • Puree everything until smooth.
  • Enjoy!

Notes

  • I left the skin on the sweet potatoes because I like the texture. You can peel for a smoother soup.
  • Sweet potato sizes vary greatly. Mine were small to medium, weigh out when your chopping, so you know you have about 500 grams.
  • I used homemade turkey stock for this but chicken or veggie broth would work great too!
