Turkey Bacon Panini with Roasted Peppers and The Laughing Cow

Ingredients
  

  • 2 slices of your favorite whole grain bread. I used Trader Joe's light as it was all I had
  • 1 wedge of The Laughing Cow Light Queso Fresco & Chipotle
  • 1 tablespoon bacon bits 7g
  • 2 jarred roasted piquillo peppers
  • 2 slices of deli turkey just under 2oz
  • About ½ oz sliced avocado or mashed mine wasn't very soft

Instructions
 

  • Smear the cheese on one slice of bread. Sprinkle with the bacon bits. Top with the peppers, turkey and then avocado. If your avocado is softer you can mash and smear on the other slice of bread.
    2 slices of your favorite whole grain bread., 1 wedge of The Laughing Cow Light Queso Fresco & Chipotle, 1 tablespoon bacon bits, 2 jarred roasted piquillo peppers, 2 slices of deli turkey, About ½ oz sliced avocado or mashed
  • Press in a preheated panini or George Foreman grill. If using the Foreman, cook for 2-3 minutes then rotate and cook an additional 2 minutes. Here's a bit of before and after.
  • The result was tasty and pretty! My favorite combination. I paired with some raw carrots and sugar snap peas on the side. Delish!
