Preheat the oven to 375 F.
Whisk the water and egg white together until frothy.
1 ¼ cups water, 3 egg whites
Pour in the VitaMuffin Mix and blend well.
1 package of Golden Corn VitaMuffin Mix
Add the blueberries and cinnamon. Stir in.
1 cup of blueberries, ½ tablespoon ground cinnamon
Separate the batter between 15 muffin tins that were sprayed with a bit of non-stick cooking spray. Each cup should be about ⅔ full.
Bake for 23-25 minutes, or until golden brown.
