Make the dressing and pickled onion by whisking the lime juice, olive oil, maple syrup, salt, and pepper. Add the sliced red onion and coat them in the dressing. Set aside.
Juice of 1-2 limes, 1 tablespoon olive oil, 1 tablespoon maple syrup, 2 healthy pinches of salt, ground black pepper to taste
Heat a small skillet over medium-high heat. Spray with non-stick.
Cut the chicken into small pieces and season. Cook the chicken in the skillet until no longer pink in the middle 4-5 minutes. Remove from the skillet and set aside.
4 oz raw chicken breast
In a bowl large enough to toss everthing add the chopped cucmber, tomato, dressing with red onion and cooked together. Mix well to combine all the flavors.
½ of a red onion slices thin, 1 garden tomato chopped, 2 cucumber chopped
Pour on a plate and enjoy!
Notes
If you don't want to use raw chicken try a store-bought rotisserie or pre-cooked grilled. Any leftover cooked chicken would work!
This makes a monstrous serving and is quite filling even though there isn't much to it. Nutritional Information is for the entire recipe, but it is sharable as a side dish too.
