Salmon Over a Super-Quick Brown Rice and Quinoa Pilaf

Ingredients
  

  • 4-5 salmon fillets about 4 ounces each
  • 1 lemon sliced (a drizzle of lemon juice would also be fine)
  • 1 teaspoon plus additional for sprinkling dried thyme
  • About 2 cups cooked brown rice hot (amount in Ready Rice pouch)
  • About 1.5 cups cooked quinoa hot (amount in Target pouch)
  • 3 cups raw spinach chopped (85g)
  • 1 tablespoon honey 21g
  • Kosher salt

Instructions
 

  • Preheat the oven to 425 degrees.
  • Line a cookie sheet with aluminum foil and spray with non-stick cooking spray.
  • Lay out the salmon, sprinkle with salt, thyme and a lemon slice.
    4-5 salmon fillets, 1 lemon, 1 teaspoon plus additional for sprinkling dried thyme, Kosher salt
  • Put in the oven for approximately 10 minutes.
  • While the fish is cooking, prepare both the rice and quinoa according to their packages.
    About 2 cups cooked brown rice, About 1.5 cups cooked quinoa
  • Put the hot rice, hot quinoa, raw spinach, honey and thyme in a bowl.
    3 cups raw spinach, 1 tablespoon honey, 1 teaspoon plus additional for sprinkling dried thyme
  • Toss everything together. The heat from the rice and quinoa will wilt the spinach.
  • After 10 minutes check in on the salmon. If it's done it will flake easily with a fork.
  • Place about a cup of the brown rice and quinoa pilaf on the plate, top with a salmon fillet and voila!
