Ingredients

  • 1 cup 140g frozen blueberries
  • 1 cup water
  • 3 tablespoon chia seeds 36g
  • 1 teaspoon ground cinnamon plus more for sprinkling
  • ½ ripe banana mashed
  • Sprinkling of sunflower seeds 10g
  • Sprinkling of slivered almonds 10g

Instructions

  • Add the blueberries, water, chia and cinnamon in a small pot over medium heat. Cook for about 5 minutes allowing the blueberries to defrost and the chia to thicken everything. I smashed as many blueberries as I could, releasing their thickening pectin as well.
1 cup 140g frozen blueberries, 3 tablespoon chia seeds, 1 teaspoon ground cinnamon, 1 cup water
  • Once the mixture is thick, stir in the mashed banana.
    ½ ripe banana
  • Pour everything into a bowl, top with the sunflower seeds, almonds and a dash of cinnamon.
Sprinkling of sunflower seeds, Sprinkling of slivered almonds
  • The recipe makes a huge serving for less than 300 calories. It's cold-weather comfort food for breakfast. I love it!
