Toasted Savory Oats with Chicken and Bacon

  • In a small saucepan render the bacon over medium-high heat. If it looks like a lot of fat came out of the bacon soak some of it up with a paper towel.
    1 slice uncooked bacon cut into small pieces
  • Add the uncooked oats to the bacon and toast for 1-2 minutes tossing now and then until they just start to brown. You should smell the oats toasting.
    ¼ cup Old Fashioned oats
  • Add the broth and cook until the oats soak most of it up.
    ¾ chicken broth/stock
  • Stir in the cooked chicken and cook for another minute to bring them up to temperature.
    4 oz cooked chicken, dried thyme

Notes

  • I've made this water, canned broth, and homemade bone broth. They are all good but the bone broth was my favorite. It would also be yummy with milk or almond milk.
  • I've used leftover cooked chicken and store-bought grill chicken strips. Both work great!
  • If you want to lower the calories and fat a little more you could use turkey bacon. I tried it but honestly, that one slice of bacon adds so much flavor it's worth it to me.
