Instructions
In a small saucepan render the bacon over medium-high heat. If it looks like a lot of fat came out of the bacon soak some of it up with a paper towel.
1 slice uncooked bacon cut into small pieces
Add the uncooked oats to the bacon and toast for 1-2 minutes tossing now and then until they just start to brown. You should smell the oats toasting.
¼ cup Old Fashioned oats
Add the broth and cook until the oats soak most of it up.
¾ chicken broth/stock
Stir in the cooked chicken and cook for another minute to bring them up to temperature.
4 oz cooked chicken, dried thyme
Notes
I've made this water, canned broth, and homemade bone broth. They are all good but the bone broth was my favorite. It would also be yummy with milk or almond milk.
I've used leftover cooked chicken and store-bought grill chicken strips. Both work great!
If you want to lower the calories and fat a little more you could use turkey bacon. I tried it but honestly, that one slice of bacon adds so much flavor it's worth it to me.
