Portabello, Sausage, Kale and Spagetti Squash Skillet

Ingredients
  

  • 3 ounces raw sausage from a roll like this
  • 1 large portobello mushroom chopped
  • 50 g kale chopped (about 1 ¾ cups)
  • ¼ cup water
  • 100 g cooked spaghetti squash about ⅔ cup
  • ½ oz parmesan cheese grated

Instructions
 

  • Brown the sausage in a non-stick skillet over medium heat. Once you don't see any more pink, add the mushroom and cook it down slightly.
    3 ounces raw sausage, 1 large portobello mushroom
  • Add the kale and ¼ cup of water to help it wilt. Kale is not like spinach, it won't cook down as easily and keeps most of its bulk.
    50 g kale, ¼ cup water
  • Once all the water cooks away, add the cooked spaghetti squash. Mix in and cook until it's warmed through.
    100 g cooked spaghetti squash
  • Pile on a plate - I didn't have the idea of the parmesan cheese until I saw it sitting there.
    ½ oz parmesan cheese
  • It was just begging for something to bring it together, and the salty bite of a touch of cheese was perfect!
