Easy Turkey Noodle Skillet with Broccoli

Whip up this easy turkey noodle skillet with broccoli and corn for a deliciously healthy meal! This easy to prepare dish is the ideal one pot meal for dinner.

  • Prepare egg noodles according to the package directions.  Drain and rinse them then set aside.
    6 oz whole wheat egg noodles
  • In a large skillet, sprayed with non-stick cooking spray, cook the chopped onion over medium heat until tender.

  • Add in the broccoli and 1 cup of turkey or chicken broth and cover with a tight lid.  Let this steam for 3-4 minutes until the broccoli is beginning to become tender.
    1 cup broccoli, 2 cups turkey stock
  • Uncover the skillet and add in the cream soup, Italian seasoning, black pepper, remaining broth, cream corn, and shredded turkey. 
    10.75 oz. fat-free cream of chicken soup, 15 oz. creamed corn, 2 cups cooked turkey breast, 1 teaspoon Italian seasoning, 1 teaspoon black pepper, Salt to taste
  • Stir to combine the ingredients then lower the heat to medium-low and simmer for 10 minutes.
  • Add in the prepared noodles and stir.
  • Serve with additional black pepper and a sprinkle of Parmesan cheese on top.
